Cool. My childhood friend was pakistani, so his mum taught me some homemade stuff. One important thing people need to understand is that secrets are not only about ingredients, it's also about how different spices are treated, how much of each spices used, when the tomatoes are added, when spices are added etc.. A nice sikh in Sydney taught me that each ingredient is cooked in stages if people just throw everything into a pot the curries won't taste right.
MrQuagmire26 couldn’t agree more. Same principle applies to making doughs.
I am 60 this year and have been trying to cook a decent curry for nearly 35 years. I have read almost every book in the library from the likes of Madhur Jaffrey to Jamie Oliver. I went on holiday to Cornwall one year and as it was raining we popped in a book shop and I found two books. The Curry book, and The Curry Secret. That is when I found the Base Sauce recipe. That was in the mid to late 80`s and thanks to Pat Chapman I cooked a good Curry. Fast forward to the last 5-10 years and thanks to the internet I am now cooking great curries. It is thanks to Forums to start, and then You Tube featuring guys like yourself who are willing to share their knowledge. I have subscribed, and enjoy your videos, so keep up the good work my friend and I look forward to your next video. All the best ; )

Your very welcome my friend. I cook at home and eat out on occasion. When I eat out I am so tempted to ask if I can have a look inside the kitchen. but it sounds as if you are questioning the hygiene of the place : ) Every Saturday night is curry night in my house and there is no shortage of diners. Thanks to you guys I can offer a large range of menus. I have also done a few authentic recipes too. I have live next door to, and worked with Indian & Pakistani people and have seen and tried some amazing food. As a teenager growing up in the 1970`s a curry house was a place where they served alcohol after 11:00 on a Saturday night, but the food and atmosphere was amazing. Even the red "flock" wallpaper looked good. I enjoy experimenting. Thanks again.

my grandfather was also in the British army in India in WW2 and my grandmother was a cook for the army, although she never made curries, my dad used to experiment with them but no internet back then, but it gave me my curiosity to get Indian food right, you've taught me a lot Steve, keep up the good work, i now live in Barbados of all places and the island only has a couple of Indian restaurants so i have to make my own as they arent that good at all and very expensive, be good to see you out this way mate !!

Great video Steven, I've had similar experience to yourself having travelled all over India and having lived there for some time. I too am passionate about BIR and authentic Indian food. My wife is Indian and have many Indian friends and family from all over India. The food varies tremendously from state to state in India. My wife and her family are from Maharashtra. I've been thinking about starting my own channel but not yet got round to it.
Great stuff. Good to meet you, so to speak. I enjoy all your videos and they have got me deeper into the curry world. And the kids like the improvement in my cooking. Keep going with the videos.

Hi Steven, first off thank you so much for doing this talking video, i was one of the people who asked you to do one. In some of your videos you often would make a passing comment about living in India or working in Restaurants and i would be left wanting to know more. I know not everyone likes videos with a lot of talking over them and i often see comments where people say less talking more cooking , but at least with a talking only video people can just watch your other cooking videos if that is what they want. Next thing, please do not apologize for the style of your videos, i think they are very natural and you have a very good speaking voice and i think the unrehearsed style is part of the charm of your videos. I really hope you include more of these blog type videos because like you i love to talk about Indian cookery as well as actually doing it. It really does seem to be a very addictive thing. Hopefully other subscribers will mention thing they might like to discuss in these videos , i know i have a million things i would like to ask questions about and discuss. So thank you for all your effort you put into your channel , i just wanted to make sure you knew your words are not falling on deaf ears. Take care.

I love Indian food and I am a vegetarian. It makes me super happy to see that you also include vegetarian recipes and lets be frank. What would the Indian cuisine be without any vegetarian food!? 🙂 By the way I moved from Europe to India over 4 years ago and also vlog about my life here (including a lot of food footage). 🙂 I will definitely try some of your recipes!

Hi Steven! I'm Scott from NYC and too shy to post anywhere. I too love exotic recipes and flavors as my English Nan's idea of spice was salt. In sweets she used the usual from tin boxes in her modern drawers that added to the aroma of her home. I've tried so many authors and regions of cooking. Then I became vegan for medical reasons. I'm not very compliant, and get in trouble often with the docs. This video was so welcome to find. Food and personal stories go hand in hand. Now I can't go with friends for lamb and falooda; but my health is better. You know the plant based diet movement? Do you hate us? Joking. I feel your passion Steven, different paths but with the same enthusiasm verging on fanatical. We really must have a chat sometime, South Indian is my favourite style so we have some common ground but I know nothing about BIR style, seriously, nothing, I've only ever cooked authentic.
Just stay interested Steven. Your videos are probably the best of the BIR vids on RUclips, that doesn't mean we're not interested in authentic as well!
Personally I would love to see an occasional vid on some of the more unusual spices (that's still relatively easy to obtain) and how they are used. Such as mango powder, ajwain, asafoetida etc.
You should try Mauritian curries, they're very different but delicious. Even the biriyani is quite unique.
