    For anyone scared by the cook time, just remember, you don't need to sit there the whole time they cook. Also, Sun-dried tomatoes are amazing. While I haven't used THIS specific recipe, I do suggest people try them. And if they keep as long as advertised, you can simply whip up a batch one day and have them for say, sandwich topping or salads for the week.

    I would think they need the lowest setting on your oven and around 6 to 8 hours. They will only keep a couple of weeks in the fridge, or months if you freeze them.

    2-3 hours just to roast tomatoes? Pass. Crank that oven up a bit
