Here in southern California, we have a heat advisory this week (high 90s F).. and this video was RIGHT ON TIME!!!! Just finished eating (reheated) roasted tomatoes after prep'ing w/salt and EVOO for an hour b4 cooking. This made a FANTASTIC difference!! The tomatoes taste more flavorful, smoother and less tart.. almost a hint of sweetness now! I used this process on large red onions and they also came out better. A thousand thank you's and I am so glad I subscribed to ur channel!
It's a bit strange that all these summery recipes, including ones that involve outdoor cooking are being released when there's a blizzard in so many parts of the country and icy weather in many more.
Likely these were first aired a year ago, or last spring/summer on PBS, but now it's RUclips's time at them. I personally think it's coincidence that a big No'Easter is heading your way, if not already there.
Since this is ATK re-posting (and not just YT reupping them in our feeds), I wonder if they are trying to reach the Southern Hemisphere audiences. Nice and sunny in Australia right now!
If its winter where you are right now, just save the video and pull it back up when its summer! Why complain about when it’s uploaded? I watch Test Kitchen reruns all the time on PBS and never start yelling at the TV about it. I think its nice to get ideas for the next season as it’s something to look forward to.
We were gifted around 12-14 large lunch bags of field tomatoes (No Cal) the kind that go to the cannery, four of which we fire on the grill for sauce prepared with s&p evoo just like this except with a screamin hot grill.After processing through Kitchen Aid veg. strainer attachment with stand mixer,4 qts. are now in the freezer.Delicious.
Yet again, you take the simplest of dishes "grilled tomato" which we All Think - what can I learn? You teach me more secretes. I was pretty much doing it All wrong from cutting to skin down first or only. Thanks
This looks good, BUT...I take any tomatoes cut them as you did, and roast them in my oven. I apply about 1/2 cup of olive oil to 12 tomatoes, and add salt and slices of garlic. I then roast in oven set at 325 F for about two hours. More water is cooked off and even hard, tasteless tomatoes come out with intense flavor.
This as expected from you was great. I personally appreciate the summer time grilling on this cold winter day. This should encourage folks to get extra tomatoe seeds ordered for this. My mind is already working on things to do with this. Starting with charred tomato halfs with Basel in a cream of tomato soup. Also some chunks of grilled tomato on a beer brats with some onion, peppers and some Basel tossed on top. Summer and fresh tomatoes, inspiration to get through the winter nights. 🍅🫑🌶🧅🌭
Would be better if the basil was chopped fine and added to the oil, then blended so it had flavor all throughout. Wouldn't be as beautiful as seeing those leaves, but the flavor would be stronger and over the entire tomato, for every bite. Also looks like a gas-fired grill. I prefer a smoker so I can use maple or other types of wood for better flavor on the food. Nothing like smoked, grilled foods. ❤

@@mariaconsuelothomen , just having fun. Yes, you can slowly braise cut tomatoes in a pan on very low heat (with oilve oil, salt, basil) for a long while, near one hour. They will lose their moisture and become like prunes. They are perfect next to meats. Try smaller tomatoes for that project, like cocktail or cherry.
@@drsteele4749 I was thinking of when you cut off the top, remove rhe seeds, fill the tomato with bread crumbs and top it off with Parmesan cheese and basil.
Would be better to put that tomatoes on a pan and season them individually instead of pouring it on top of a couple of tomatoes and hoping it gets spread around

any English person or Anglophile will recognize grilled tomato as standard addition to the full cooked breakfast along with the bacon eggs and toast along with other goodies like fried mushrooms 😁
And that's about all that whole area has going for them culinary wise. A breakfast. I appreciate the tip on how to cut them and which side to grill first. I think that is one reason I've failed when trying to do this.

What temp do you have the grill at??? I've been wanting to try this but need an idea of how hot to let my gas grill get.
What temp? I know, right?! You have to look up temp for medium grilling. That’s how I do have to do it.

why use extra virigin olive oil? the grill gets way too hot and you end up with a bunch of unwanted transfats.
