    As an Irishmen I can honestly tell you that this recipe is absolutely dalicous I made this particular recipe last year for St. Patricks Day and my family loved it.     I made this and it is extremely delicious. The colcannon I have made before was baked in the oven. This time I used your recipe but added a little sauteed lean bacon and put white pepper in the mashed potatoes. I like this much more than the baked version! Thanks for a great recipe.

    It's good made with other vegetables - a few days ago I made it with four : cauliflower , broccoli , spinach AND brussels sprouts . And I add a few bay leaves to the potato cooking water .

    Damnit! I'm an archaeologist and we've clearly been wrong about Stonehenge the entire time! I'm gonna inform my colleagues about the leprechauns and bring this fantastic colcannon next time we head to the UK! Cheers!

    We definitely use cayenne in Ireland, Chef. I can't get enough of it in my cooking! Confirmed by an Irishman in Ireland, there you go. Beannachtaí na féile Pádraig duit!

    I made this for dinner tonight and it was AMAZING. The only changes I made were I used cabbage instead of leeks because that's what I happened to have and I added a touch of allspice to the seasonings along with salt and pepper, but besides those tweaks, I followed the recipe as you showed and wow. Absolutely delicious, and you're right--the light green color of the potatoes does remind one of spring/summer. What says "Happy, warm weather," more than green mashed potatoes? In short, this was great, and I'll definitely be making it again, many times. Thanks, Chef John!

    Hey Chef John! I made this! I didn't use leeks, just extra green onion that I had on hand, and cabbage instead of kale, and it was awesomely tasty. Will definitely make this again. The green onion garnishes on top were extra yummy.

    One of the reasons I love this channel: When these are uploaded at american late night, it's nearing lunchtime here. So all the americans are starving, while I'm enjoying a nice visual appetizer before lunch. Woo!

    It's a meal in itself. Don't need the corned beef. I like to use not only kale but also cabbage and parsley. I also cook a parsnip in with the potatoes. Pure genius, and ambrosia for Irish gods!

      No one in Ireland eats that with corned beef. We use bacon, and typically with a simple white sauce as well.

    Actually, colcannon is actually eaten during All Hallow's Eve...
    An it normally has a doll, a coin, and a ring... All of those things represent something prosperous in your future...

    This is the greenest colcannon I've ever seen, I tried it just today, I used Savoy Cabbage, white onion, spinach , garlic and regular potato. I came out great. Very different to the ones I've had in pubs in London, but still a lovely dish.

    OK chef, I have been trying to get you recipes from Faha road Ireland for fruited bread. Try red mill courses grind. Imagine you are at stavion point. On Christmas day you can afford a very small handful of Irish currents. You are hungery and the British are firing at your cottage. This is all that fruit bread is!     BTW, here's a little tip:
    Put the cream (or milk) into the blender (or processor) with the greens.
    That helps everything mix more easily.

    I have mad literally 300lbs of Colcannon for Irish Dance Fund Raisers over the years. One of my favorite potato dishes. It also makes a great bowl for Irish Stew.

      Sheesh! I forgot the main thing I was going to say! I've made your Guinness stew several times. I cut back on the tomatoe paste, though. Too strong for my taste, BUT...the bed of mashed potatoes is going to be collcannon w leeks! I'll be a hero.😊

    I made steak with colcannon tonight! Mine didn’t have that pretty, green color that yours has, but I just used kale without onions or leeks, and I didn’t blend the kale either (I just chopped it roughly by hand). It still tasted great though!

      white pepper works great too in mashed potatoes. you wont notice in a dish like this, but with regular mashed potatoes black pepper kind of stands out visually, but white pepper blends right in, and its spicier then black pepper with less... i guess you'd call it "peppery" taste.

    i cut the potatoes smaller..and use chicken broth and add the kale and onions the last half of cooking..then add the butter as I'm mashing...i don't drain...if you get the ratios just right..all over the stove top cooking on low it turns out not quite as green but very nice and lovely...that's just my way but thank you so much for bringing this to your fans :)

    this is just "boerenkool" (translated: farmers cabbage) it's a really famous dish in holland especially in the winter.

    I’m in a physical therapy nursing home and lunch today looked gross, but it was good (though it seems like they were using up scraps). It was a giant scoop of cubed boiled potatoes, with wilted spinach and trace amounts of broccoli and ham. I guess it was bound together just by potato starch (maybe some were mashed), but colcannon was the closest thing to come to mind.
    ince the potatoes were in chunks, you might call it “deconstructed,” but I’d like to try the original, smooth version with some cubed ham. And for sure a nob of Irish butter on top. Almost like a warm Russian “Salad Olivier.”

    I am going to have to try this Colcannon recipe. I make Colcannon but start with diced bacon, use the fat in the potatoes ( + butter and cabbage) and season with white pepper. Drag a fork over the top to make a rough texture then cook in hot oven till browned.

    Of course we use cayenne in Ireland! But not in traditional dishes like colcannon! And you were totally right, its a serious law in Ireland to use butter as a garnish for everything!

    HMMMMM I love mashed potatoes and cale. Here in Holland we call it "boerenkool" (farmer's cabbage) and we eat it with smoked sausage and gravy, DELICIOUS!!!

    @WalrusDoom Other fun facts - not too many people know that during the Irish Potato Famine (Gorta Mor, 1845-52), where roughly 1 million people died and another million left the island, the British were actually EXPORTING food from Ireland. It was an effective knife to the heart of what once was the most populated county in western Europe.

    @Microtommy The Irish have their own bagpipes --uilleann pipes, like they have their own plaids. And word to those that would use either one on St. Patrick's day, make sure not to use the Scottish versions of them. ;-)

    You also could add some egg yolk at the end stage, it's pretty darn good and gives an extra touch in color. Try it, it's good ;)

      i do that all the time to make creamier, more savory mashed potatoes. I always mix it with some milk or cream to keep it from turning into scrambled eggs :3

    I make a Scottish version of colcannon.
    I add cooked cabbage and rutabaga to the potatoes. Then I mash them together with lots of butter and a little cream.
    I usually serve it with some grilled bangers.
    But my version would be a St. Paddy Day fail as it's not green.
    My Irish neighbor makes hers with only potatoes and green onions. Hers comes out green.

    @foodwishes Uilleann Pipes are Irish :P Give 'em a listen, they are slightly less annoying than bagpipes...ah, as long as I'm at it, bagpipes are also traditionaly played in Spain and Greece (and probably somewhere else I don't know:P)

    @DontTouchMyVicodin we usually eat it with a roast, or with bacon and cabbage. basically it is a tasty substitute for mashed potato!

    We know a similar dish in the Netherlands as "boerenkool" (no leek in it) and serve sausages with it. In the middle, we make a hole and put some gravy (is this the right word?). Love it!!

    @ziberteck Being irish... i can recommend that this is a good side dish with just about any meat - chicken, steak, lamb... but i'm quite partial to having it with a nice pork chop!

    Let's be clear Irish food isn't just for St. Patrick's Day. Also, there's a whole world of Irish Gourmet cuisine that the world knows nothing about. I found a book on Irish cuisine once and was blown away by the recipes (their complexity and their ingredients).
