    Hey Laura i live in Ireland ...years ago when my Nan made Calcannon she would mix young nettles in with the greens to stretch the veg and the spuds, for her very large family ....it was not talked about it was just done that way.....people would snear at families who ate nettles .......now all this time later the benefits of nettles are revered ....so my Nan was right :) love the video xx

    Irish grandmother. Cabbage and scallions, lots of butter. Never tried kale. Looks great not made in years, bring back memories. She died 1984.

    Hi Laura,I"m born and raised in New York,where corned beef and cabbage was started,years ago.
    In Ireland,where my family is from,they used slabs of bacon along with cabbage etc.Thank you
    for all your recipes.I've recommended you to every one I know.I do all the cooking for my
    family,and I'm better because of you.Stop by for my corned beef dinner,it's great..John McHale himself!

    Hey Laura, I'm from Ireland as well, there's not really a traditional Paddy's day dish but in our house it's usually a lamb or beef stew, with a good healthy portion of spuds

      @@Gallboynarossan Guinness produces a lager called “Guinness Blonde” which I believe is only available here in the US. If you can ever get ahold of some, it also makes a great flavoring

    I was going to skip this video because I didn't know what colcannon was. I am so glad I decided to watch. An amazing recipe as usual! My garden produced so many potatoes and greens that we have stored through the winter. I am always looking for new ways to use up the harvest.

    We make a very similar dish in Portugal but with broccoli rabe. Make the mash as usual and boil the broccoli rabe but than we put about half of cup of EVOO with a diced onion and some garlic on the stove top until the onions cook to translucent. And mix everything together so in place of butter we use the EVOO.

    The whole corned beef & cabbage thing was started in America because back when the Irish immigrated over corned beef was one of the cheapest meats. My great-grandmother told me about it that she was told from her parents

      Thank you for the history.. I always wondered. I come from an Irish/Scott family, great grandfather came from Kilkenny. Anyway, I asked my grandmother this question and she wasn't sure 😀

      @@Breezy-bv9te Yeah it started in the US I'm not sure on the date but I know it was before the great famine of Ireland when people immigrated. I have first-hand knowledge of the culture. I spend more than half my life over there being a dual citizen of the US & Ireland. My family is from Tipperary & Cork a few spread out the island.

      The best butter in the world! I use it for baking, sandwiches, toast, crumpets, mashed potatoes, vegetables etc.

    In the Netherlands we boile the cale with the patatos. And then put some baked bacon and sausage in it. Some even use some vinegar with it.

    Laura can you please make some shamrock shakes and shamrock ice cream they are both made with spearmint extract and milk chocolate chips PLEASE they are the BEST Irish deserts

    This looks delicious! I would say though that the most common green to use would be something like a white or savoy cabbage because 'cál ceannann' translates to white cabbage. It's just because that's probably the most readily available option (and how my Grandma makes it so perhaps i'm a bit biased).

    I thought I was the only one who added scallions galore to my colcannon. (galore is a word of Irish origin, btw!)
    I think the classic green is cabbage, however ... the "col" of colcannon is like the 'cole' of coleslaw - cabbage!
    Yours looks great, too!

    I had no idea this dish had a name! I make it with plain yogurt instead of cream and spinach instead of kale because I live on the Balkans and yogurt and spinach are easier to find. It works!

    We’ve always used bacon, onion and cabbage for our Colcannon recipe. We’ve always loved how it turned out this way. Can’t go wrong with bacon!

    Boiled dinner of Ham Potatoes and cabbage. With carrots and onion. That is what my Irish Catholic Grandmother use to make.

    Yes we do have corned beef and cabbage here in Ireland but not just on Paddy's day. Any cabbage will do, and yes you want a dry spud to help your mash be fluffier. It's a bank holiday here and most towns and cities have a parade (apart from the last two years ) then we spend time with friends and family.

    I've been living in the (US) for nearly 24 yrs but inwas born in London into one of those once typically large families ( 8 kids) and needless to say raised on all of this ( not fancy) but good food! Great Job Laura!🇮🇪☘️👍

    i am like you... I just love potatoes.... they are my favorite vegetable!! But i have had to cut them out of my diet... temporarily, while i try to lose weight. But my gosh these look absolutely out of this world!

    I’m from Sweden, where we eat a lot of potatoes. We like our mash firm, not loose, but salted butter and ground WHITE pepper are mandatory! I’ll try this with spinach, my favourite green 🙂

    Growing up poor in 1880s Ireland, my grandmother would never have had the luxury of butter or heavy cream. Her recipe for Colcannon (you pronounced it perfectly) used boiling water, beef bouillon, cornstarch and water to thicken and enhance the liquid when mixing all together. I think my family will like your recipe better, and we will try it. My grandmother died when I was an infant, so this recipe has been handed down without the experience of tasting hers.

      Yes!!! My new obsession! So delicious. I found them on Simply Mama Cooks channel. She is Mexican, so not sure if her recipe differs from the traditional El Salvadorian way, but they were delicious and so versatile!

    It kinda looks like a typical dutch dish with mash and carrot or mash and kale or endive all hussled together. Make mash and endive with crisp bacon in it. We call it stamppot. Eat it with a pork sausage or a meatball or smoked sausage, yummm!

    st. pat's is they day to break out the Bailey's. Irish cream cheesecake, coffee, brownies, great follow up to a Guiness beef stwe or a shepherd's pie

    I agree that the potato ricer is a pain to clean. It makes the most creamy mashed potatoes, but damn, the aftermath in the ricer is literally glue & cement, lol.
