Janis Hart oh they were so awful I threw them out! Yes I guess she doesn’t answer post often. I made them again and they turned out the same way. My stove is kitchen aid, new. I just can’t figure out what is wrong. Used fresh ingredients, temperature is fine, didn’t scoop the flour into my cup, making sure I didn’t add too much flour to make them dry! My best friend is Menonite and she makes them often (pumpkin whoopie pies) and hers are so moist. Since my husband loves chocolate pies better, I was excited to try this recipe. But I haven’t gotten a moist whoopie pie yet! Have to keep at it I guess!

One teaspoon of baking powder is actually made from 1/4 teaspoon baking soda, 1/2 teaspoon cream of tartar, and 1/4 teaspoon cornstarch (corn flour). And yes, use 1/2 butter instead of 1/4 cup butter and 1/4 cup vegetable shortening.
I made these last night. I ended up with way more filling than I actually needed but I just froze the leftover until I decide on a use for it. Otherwise they were really good. I used half Nestle's cocoa and half Hershey's Special Dark and they have a wonderful, deeply chocolaty flavor to them. I also liked that the pies were on the small side, perfectly sized for one serving. I'd make these again but would probably halve the amounts for the filling.

If you look closely at the picture of her finished product, it's obvious that she actually baked hers in some kind of cupcake or muffin tins...maybe even a whoopie pie pan, so don't feel so bad. You can tell because her finished 'cookies' are rounded on top and then visibly cut in, showing signs of being formed in some kind of pan to hold their shape while baking. See the little air bubbles...?
I've always used a non stick jelly donut mold tray to make the chocolate circles, makes them come out perfectly round, I fill it with devils food cake boxed mix. for filling I use cricso w/ powdered sugar or just betty crocker frosting.

Stephanie’s filling is exactly what a traditional whoopie pie filling tastes like actually. It doesn’t call for marshmallow filling. These are perfection. You should try it.
I don't think the filling is too runny. While I do use shortening and powdered sugar, I like the addition of butter, vanilla, and corn syrup. Of course, there are many recipes for the filling, some using Marshmallow Fluff. The filling recipe I use comes close to that flavor and texture.

That's a De'Longui mixer, you can find it on their website. See if it's available in your country. On mine it's not! :(

The one thing you could try is to bake them a little less. Dryness is typically a sign of over baking.

if its same with the cookies, then brown sugar makes it soft and chewy, white sugar makes it crispy. that's what I know

Real Whoopie Pies have Crisco and powdered sugar in the middle I have no idea what she made that middle is toooooo runny
