While waiting for my beef ribs on the smoker, I decided to make these for a mid afternoon snack..... I have to admit they were the star of the day.... My 92 year old Mother couldn't stop raving about them... Great job Susie!!! Love peach as a glaze! I've used a different mix on ribs but I'm going to try this one out soon... Nice work!
Yum! I also add a sliver of jalapeño and sliver of pepper jack cheese wrapped in the bacon. That sauce looks amazing!
Have you tried skewers instead of toothpicks? We do them that way and each person takes a skewer or two and makes flipping so much easier and quicker. Plus with metal ones less chance of the wood breaking off inside.

I am a "Shrimp Snob". I am walking distance from Mobile Bay. I love this recipe. I've never used peach & mango jam, but I will next time. Shrimp, bacon, and a sweet tangy sauce....What can possibly go wrong? I am bias, I think Alabama caught wild shrimp are the greatest! (I had to brag a bit).

Looks incredible! I must say that that jam would work perfectly on a side dish of: thin round of Brie cheese, slathered in the jam, set on either a crescent roll dough sheet or other similar, sealed up and baked (even on the grill ;-) for 13-15 minutes. Great accompaniment to your Shrimp!
I learned that side from a Maestro of Charleston SC low country cuisine that goes with anything! I've also done it with jalapeno jelly and it's awesome too. But a complex peach or apricot preserve really hits on target. Thanks for all you do.

If I haven’t cooked shrimp before, what am I looking for to know if they’re cooked all the way through and not over cooked or under cooked?
