I think the low voltage wires are for if you do not have a poe capable switch or injector, but already have the wires from your transformer running to your door. It would be one less device you have to deal with if you already have power running to where you are going to mount it. It just gives you some options when installing it.
Yes, it the user doesn't have a PoE switch of the Reolink NVR. The only difference between the doorbell models is PoE power vs WiFi antennas. Both have RJ45 network jacks and low voltage power connections. If they added WiFi antennas to the PoE model it would be 1 model for everyone. The end user could decide how to connect it, not sure if that was a cost savings issue, if they couldn't fit both PoE power converter and WiFi antennas. I disassembled my doorbell and that was the only difference. Probably do a tear down video in the future to showcase the build quality and material durability.
