    Hey Arlene, your videos are very good as usual. I do make Chicken pelau, and Cole Slaw, and I love to have it with a few slices of avocado as well. I usually use all the ingredients that you've used plus, some diced pumpkin, carrots, and red and green bell peppers, and into my Cole Slaw, I add shredded carrots, and red and green bell peppers. I love to see my food looking very attractive. By the way, I'm Trinbagonian too, but I don't use much ketchup, lol. I'm trying to watch all your videos to see if I can learn a few things from you, and when I do, you'll surely know. Love and God bless!

      Ah yes, the diced pumpkin, carrots and bell peppers sound like the version I know and love. Corn in pelau just don't sound appealing to me.

    Hi there, you said pimento peppers, never saw the fresh ones before. Hope my market has them. For the seasoning you did say thyme? Those are not thyme leaves on the plate, too big. Thyme are tiny little leaves on a thin stalk. You do every thing so cute. I like your presentations.

      Hello... you can look for minced pimento peppers in the bottle this is a good sub. Or another flavoring pepper of sorts. Sometimes I've seen the already blended seasoning in the bottle. We have several types of thyme. the one in this video is call big leave thyme or broad leaf thyme.. internationally I've heard it being called Mexican mint. ... thanks for watching and Happy cooking...

      Linda Johnson ; Those leaves are called Spanish Thyme, it has an amazing aroma and adds an exotic flavouring to your meats or fish dishes.Can't tell you where to find It because i grow mine as à house plant.

    I use long grain parboiled rice for my pelau (I'm a trini) and if limes are not available I use regular flour and shadow beni to "wash my meat". It does a better job I think... luv the hair colour though.

      Hello. I'm happy you tired this. If it taste a little bitter it's because you let the sugar burn too much... this takes a little practice to get it just right... sometimes a little extra coconut milk and ketchup helps .. but in future don't let the edges get to black better to catch it right at copper brown . Good luck and keep trying .

    Correction to you !. Pilaf is a staple in Mainly Indian subcontinent, Central Asia, Middle East, East Africa, Not in Central America.

Am east African.our pilau is quite different.it has no ketchup, brown sugar base, the corn, coconut milk, i was so confused..plus our wheres the masala..cinnamon cardamon, cloves, coriander.This dish confused my tastebuds..again chicken in pilau..we use red meat or veggies.chicken is for biryani

      Sorry, it's a W. African based dish called Benachin/Jollof Rice there. The Africans brought it to T&T. There is a deliberate attempt to 'cleanse' the African contribution to the society in T&T.

      Even if it is originally from W. Africa, and it was brought here by us (the Africans) we still had to tailor the ingredients over time to suit the type of local ingredients we have in our environment. I have had Jollof rice and it does not remind me of our local Pelau dish.

      These recipes are just the traditional way I learned but you can def use substitutes as you need to. Happy cooking

      Yes our avocado come in really big and we have 2 types of thyme that are popular here .. the broad leaf or Spanish thyme.. and the fine leaf thyme.

      Hey.. I'm sorry you might have missed it but we do edit things to ensure we keep within our time frame for the show. Washing produce etc. Is done prior and the hands are edited out so we can keep things moving and interesting. I guess we assume persons know about washing hands. However thanks for the feedback I'll be sure to include some of those shots in our future videos so you don't feel misinformed. Happy cooking.
