Pumpkin and carrots are a standard ingredient of the recipe. Leave it out if you don't like it but other people do! Plus its good for you - lots of - beta carotene.

I enjoyed watching your video and must say that I make pelau using the same ingredients only. In my opinion, adding carrots and pumpkin alter the authentic flavour. I love pepper. It is on my menu for tomorrow.
In Guyana we call that dish...Cook-up....an it is very delicious an also we have different versions of it...I must say that looks delicious...instead of using sugar to brown the chicken we have something call casareep...that we use.

Renee, I don't use oil to make my browning, or caramel at all. My daughter is afraid of making it, so I usually do it for her in advance, and pour it into a bottle; she takes it home, and whenever she's making cake, or pelau, or anything that needs browning, it comes in handy! My Chicken pelau is similar to yours, but I add one, 6-star Anise, some diced carrots, and green and red bell peppers; it doesn't only taste nice, but also looks nice!

That looks so good. Never knew about the foil trick, always wondered how others got it less "wet" so I will try it next time. I must say that I brown my sugar without oil in all my stews and it comes out really really well. It's a great way to avoid the extra fat since most meats and coconut milk will already have a bit of oil. Thank you so much for sharing all your great recipes! 😊💛

I like the simplicity of the Pelau I plan to make it. I may use lentils instead of pigeon peas because my family all love lentils. Adding the coconut milk is awesome. Can't imagine the aroma

This is a little bit different from the recipe I found in the cookbook. It's a little bit different - no worcestershire sauce and/or soy sauce - which is great. Also, adding the foil to seal in the flavour is a great touch.

Hi Renee, I've only recently found your shows on RUclips and I am very impressed. I know how to do most of what I've seen you cook already but with some personal variations as expected. I normally put pigtail, smoked bones, chicken and pork for a juicier more fragrant pelau... lots of green seasoning and pimentos. I usually eat immediately as I turn off the pot with a generous dollop of pepper sauce on the pelau. Thank you for your recipe! Looking forward to viewing more of your work!

I love my pelau sappy!!! A bit more saucy than what you had there with pumpkin and carrots. A good pelau is where it is at with lots of coleslaw and or zaboca on the side, a true trini dish!
Some people love to put a couple Bay leaves and whole cloves in the pot. Not a fan of whole cloves though so I use a touch of ground clove. Very simple recipe to follow 👏🏾👏🏾
You can use some chicken stock. It will have a different taste than traditional pelau but it will still taste good. Keep in mind that some stocks have sodium so I suggest adding salt sparingly
Tori Wayne It’s really easy but not everyone can do it well which I find interesting about this dish. I had to try a 3 times before I perfected it and it’s still not better than my trini mama’s pelau🤣
I like the peas also in my pelau not pumpkin but I would try that style sometime.. What's this thing with the coconut milk is it a Trini thing 😉 😁 my wife is allergic to coconut or so she think. So I think I am going to leave that out..
I noticed that the chicken was seasoned but you didn’t say with what I assume it was green seasoning. Being half Bajan and Jamaican I’ve never had pelua rice like this only biryani which seems similar, I’ll definitely be trying this recipe because the process starts very much like brown stew chicken which I love and I also love the one pot cooking ❤️❤️

I love my pelau not too hard or soft. I made my browning before, store in large tightly covered bottles. Just add the amount to the desired color, on request.I add my grated carrots, after the stove is turned off.Mix and cover.
National dish of Trinidad is a 4 course meal. Rice , callaloo with blue crab, stew chicken and Mac pie. Period, this is up for no debate. With green salad. So 5 course meal
Yes mam very nice upload but it's a bit of a risk to put in the rice so soon because sometime the chicken takes longer to cook and the rise got mushy in the put
i do the same method just when i put in my chicken i put in piece of table butter for flavour while it is sweathing after add ketchup and the seasoning .... but well done

This is very similar to what my great grand used to make in South Carolina, USA. They call it a perlo, very similar to the word pelau.
I do mine the same except I use carrots, a little ketchup and sometimes canned corn.

It's seasoned with Trini Green Seasoning which is a blend of garlic, ginger, chives, shadon beni, celery etc.

I love to add a bit of golden ray butter to the pot and then serve with plantains and a side of salad
