- VEGETABLE KORMA. So delicious and very Healthy to eat, Anyone can prepare it easily in this severe Heat. Use more Veggies & Greens. Stay Healthy.
"A" Ingredients Roast it & Grind into Paste:
*1tbsp Coriander seeds
*1tsp Cumin seeds
*1tsp Fennel seeds
*3-4 Peppercorns
*1/4tsp Turmeric powder
*2-3Dry chillies
*1pc Cinnamon stick
*3-4 Cloves
*2-3 Green Cardamom
*1-2 Onions
*6 Shallots
*2-3Green chillies
*1tbsp roasted Chana Dal
*1tbsp Poppy seeds or Sesame seeds
*12-15 Cashews soaked
*1/2cup fresh Coconut
"B" •Roasting in Curry:
*2-3tbsp Oil
*2 sprigs Curry leaves
*1-2Bay leafs
*2 Oinions chopped
*6 Shallots
*1tsp Gg paste
*1/2tsp Turmeric powder
*1/4tsp chilli powder
*2-3 Tomatoes chopped
*2tbsp Dahi/Yogurt optional
*4tbsp Coriander leaves
*Salt to taste
"C" 70% -80% boiled Vegetables: You can use as per your interest:
*1big cup Cauliflower florets
*1small cup Beans
*2 Carrot cubes
*1/2cup Green Peas
*1/2 Soya beans/optional
*2 Potatoe cubes
*1 Turaiya cubes
*1cup Paneer/Optional
*Method:
1. Dry roast all the whole spices mentioned in "A". Use 1tbsp oil & roast other all ingredients. Cool it all completely & grind into fine paste with sufficient water.
2. Cook all the Vegetables "C" with salt upto 70-80% & keep aside.
3.Heat Oil in a Pan & roast it all the ingredients mentioned in "B" add grounded curry paste roadt it 2-3mins add all the par boiled Vegetables adjust the curry medium thick consistency add salt to taste.
4. Cover lid & cook it for 5-6mins. Garnish with Coriander leaves.
5. Delicious Vegetable Korma is ready to serve. Eat with Fried Rice, Jeera Rice, Rotis, Parothas, Neer Dosa or Pav.
