Classic Detroit Style Pizza - thick Crust, juicy and crispy

- This time, we're making a Detroit Deep Dish Pizza together, also known as a Detroit Style Pizza. First, I'll explain some interesting facts about Detroit Style Pizza.
Then, we'll make the dough, and of course, we'll bake the Detroit Deep Dish Pizza at the end.
Ingredients for a Detroit Style Pizza:
350g Type 0 Flour (at least 13% Protein)
260g Water (74% Hydration)
11g fine Sea Salt
1g dry Yeast
20g Olive Oil
Ingredients for the Tomato Sauce:
1 Can of Tomatoes (400g)
1 Onion
1 Clove of Garlic
4g fine Sea Salt
A pinch of freshly ground pepper
Preparation:
Pour the water into the bowl and add about one-third of the flour. Then add the dry yeast to the flour. Mix everything well. Now add the oil and also stir well. Then add the second third of the flour and mix. Then add the salt and mix again. Finally, add the rest of the flour and mix everything well.
Brush the bottom of a container with oil and place the dough inside. Seal it airtight.
After about 30 minutes, stretch and fold the dough for the first time. To do this, pull all sides of the dough lengthwise and fold them upwards. Cover the dough again.
Repeat this process 3-4 times.
Then place the container in the refrigerator.
After about 24 hours, stretch and fold the dough once more and return it to the refrigerator.
Take the container out of the refrigerator 5 hours before baking and let it rise at room temperature.
Brush a Detroit Style Pizza pan (or a casserole dish) with olive oil.
Carefully transfer the dough from the container to the pan.
Rub the dough with olive oil and press it into the pan with your fingers. Let it rest, covered, for about 30 minutes.
Press it into the pan again so that it fills the entire pan and let it rest for about 60 minutes.
Meanwhile, prepare the tomato sauce:
Peel and finely chop the onion and garlic. Sauté the onion in olive oil briefly, then add the garlic and sauté briefly as well.
Chop a can of tomatoes and put them in a bowl. Add salt, onion, and garlic, and season with pepper. Add some chopped basil leaves to the tomatoes.
If desired, you can also add a pinch of sugar. The tomatoes can also be briefly boiled if desired.
Then, put enough cheese on the dough.
Grate Parmesan over the cheese.
Traditionally, pepperoni (spicy salami) is spread on the pizza.
Finally, the tomato sauce is spread in stripes on the pizza.
Baking:
Bake the Detroit Style Pizza on the lower rack in a preheated oven at 250°C (482°F) for about 20 minutes.
