I'm allowing myself to relax and do some crafts. The only task I'm committed to each day is making sure I take my dog for a walk no matter what the weather is like. It doesn't have to be high tempo or super long; the goal is simply to get outside and get fresh air together. 😊

This is great, thanks, Maddie! I've been indulging in holiday sweets a bit more than I would like. I'm also planning to make some treats for the neighbors in my building, so I've been gathering supplies and planning. And watching a holiday baking contest probably didn't help with the sugar cravings, though it was a ton of fun. So...I've had sugar on the brain and that's not the best thing for me, given that I've been working to lose weight. I'm trying to shift my focus back to the healthy stuff. Fortunately, I was just gifted a bunch of veggies, so I'm looking at how to best use them. You actually got me started on the Daily Dozen, so thanks for that! I make a veggie soup with kale, spinach, onions, carrots, and celery, with a mock chicken flavor (garlic, salt, turmeric) and one serving of that checks five different boxes. I agree that having snacking veggies cut and ready-to-go makes it more likely that they're going to get eaten. I am definitely going to look into that cashew ranch, because I've been craving sweet potato fries, lately (baked) and that could be the perfect thing to dip them in. Blessings!

Thanks, Maddie! I think a lot of people have a hard time with Christmas being synonymous with candy. Ugh. I actually ended up having to chuck out the candy making supplies, as well as the idea of making the candy for my neighbors, because keeping that stuff around was self-sabotage. Thanks re: the veggies and soup :) I've made the soup pretty much every week, since. It's a really good base for adding beans and grains and I'll probably write a blog post about it, in the near future. I might be slightly allergic to cashews, so I'm hesitant to make the cashew cream sauce (I got some and have been nibbling on them to try and see if I react badly), but I remember you saying that white beans could be used, as a sub, so maybe that could work for the ranch? I just finished it and it's really good! I hear you that white beans are maybe not the best sub for cashew cream, but that silken tofu might be a better option. Thanks for the suggestion of sunflower seeds. I'm not super keen on the flavor, BUT that got me thinking and I do have roasted almonds that I've been planning to make into almond butter. I'm going to try mostly silken tofu, plus a little bit of almond butter for the base, because I think it's going to need a bit of fat. That should give it a similar richness and body. I stocked up on all my salad making goodies, tonight (even though it's winter and there are piles of snow on the ground) so I could try this, LOL. I'm really looking forward to it :D I'll let you know how it goes.@@LetsEatPlants

I'd love to see a video on spices and how best to use and combine them. They make a wonderful addition, along with fresh herbs, but I'm a novice on how to maximize their flavors. Also quick and easy salad dressings and marinades. Thanks!

Cool fact you don't have to poke sweet potatoes before cooking. Unlike white potatoes they won't explode and all the great flavor stays in the potatoes! ❤
Spinach is a great sub! Have you tried steaming or sautéing it first? I’ve heard they can help! Also removing stems and/or eating with some digestive aids such as ginger could help too. But if you are happy with the spinach then that works great. 😀

I wash and chop my green onions and put them in freezer. They last and are ready to go instead of rotting in the fridge!

I roast my sweet potatoes every week and they have never exploded.... I find they are moister if I don't poke holes in them

Just out of curiosity, why don't you eat the kale stalks? For salads and sautes, I just chop them a little smaller. The stems are super nutritious!

I can’t eat Kale, it gives me horrible gas. I always substitute in spinach for any recipe that calls for kale and it always seems to work.
