材料:
馅:
360g 去线虾仁
100g 韭菜
1 小勺盐
1/2 小勺糖
1/2 小勺白胡椒粉
1/2 大勺绍兴酒
1 蛋白
2 大勺橄榄油
2 小勺淀粉
2 小勺芝麻油
皮:
1 杯澄粉
1 杯玉米淀粉或者土豆淀粉
210 毫升热水
1 小勺橄榄油
这个配方可以做26个饺子
水开后蒸6分钟
Shrimp and Chive Crystal Dumplings, fresh out of the steamer. Tasty shrimp and chives flavor combination with a chewy translucent wrap. One of the best Asian cuisines you must try.
Ingredients:
Filling:
360g peeled and deveined shrimp
100g chives
1 tsp salt
1/2 tsp sugar
1/2 tsp white pepper
1/2 tbsp Shaoxing wine
1 egg white
2 tbsp olive oil
2 tsp corn starch or potato starch
2 tsp sesame oil
Wrap:
1 cup wheat starch
1 cup corn starch or potato starch
210 ml hot water
1 tbsp olive oil
this recipe makes 26 dumplings
Steam over boiling water for 6 mins

That’s one teaspoon of soy sauce, 2 teaspoons of vinegar, some green onions and chopped red chili.

Sure. Put them on a board to freeze until each one gets hard, then throw them into ziploc bags to freeze longer time.

What is the temperature of the hot water? My dough came out crumbling and powdery won’t stick together .
I used boiling water. When pouring the water in, keep stirring. If it's crumbling and powdery, there is too much starch.
When you measure the starch with cup, the starch should be fluffy, not to pad too tight. Try using a spoon to scoop into the measuring cup.

Wheat starch is the starch from wheat, potato starch is the starch from potato. Simple as they are.

Sure, scallions can definitely be the replacement. You might want to use only the green parts, the white parts are too hard to be hold in the soft wrap, might make some holes on the wrap.

Followed all instruction (measured temp etc), wasted 2 batches of dough and used all the starch. Still can't achieve the results. Skin just broke and all fillings are wasted as they stick to the skin. Looks like one has to self adjust the measurements to make it right. Sigh
Sorry to hear the two failed batches. The amount of the water might need to adjust a little bit due to the different brands of the starches. Hot boiling water is also the key. You can mix the dough with a stand mixer if it’s too hot. When you rolling the wrapper if they are cracking on the edge, just tap a little bit of water in the palm to moisture it, it’s easy to put them back before wrapping.

水温大约在80摄氏度以上或者刚开的水,皮硬是因为水少了,不同牌子的小麦淀粉可能吸水性不同,小麦淀粉很吸水的。不够就再加点水,一小勺一小勺加,加水后揉一下就软了,这个面团比普通面粉面团好操作,没有面筋。

您好。倒入的油被淀粉吸收了,再加上时间长了水分也会跑掉点,所以是会变硬变干点的,比较难擀开。还是尽快包好,可以包好以后整体放冷冻保存。

Is wheat starch same as wheat flour (all purpose flour)?? Or it's better to use rice flour & potato starch flour ?
Wheat starch is the starch from wheat flour, they are not the same, wheat starch becomes translucent after being heated. and potato starch makes the dumpling wrap a little bit sticky to hold the shape. Rice flour is often used in steamed rice roll that does not require shaping.

您好!我的面团很湿,我再做一个减了水,但还是湿,没办法擀面,什么原因呢?
粉和水的测量没问题吧?1杯澄粉加1杯玉米或者土豆淀粉(我用的杯是1杯=240毫升),再加入210毫升的开水,如果粉和水的比例都对,应该不会湿的,要准确地量一下,揉成团后,外面没有粉了,倒入1大勺油,把油揉入面团,一开始很滑,揉着揉着油就杯吸收进去了。
如果你们那里用的粉的吸水性不太一样,那么就慢慢地加水,加一点揉一揉,再加点再揉揉看,能揉成团,外面没有干粉,就别再加了。
