- Grandma always makes prosperity cakes to celebrate the Chinese New Year. This recipe makes 5 single serving cakes (cupcakes/muffin size). When the cake is steamed, the cake blossoms into a smiley crown, a symbol of good luck, health, happiness, and prosperity.
Best of all, it's easy to make and it's gluten free, diary free, and contains no eggs. Enjoy!

Grandma, the recipe tastes great. I have made a few batches before but today the cakes have a dense lower layer but the top half is fluffy like regular steam cakes. Could it be I used coconut oil? I also put the baking powder with the rice flour before I mix in the water. Any advice will be appreciated.
Try adding the baking powder last and then let the mixture sit for 10 mins (This will allow the baking powder to do its job; producing carbon dioxide gas, and inflating cakes, otherwise the gas bubbles will escape while mixing.) Be sure to mix a little bit before pouring into the cups, as the mixture could have settled. Hope this helps.

Thank you for posting this. I have tried making fa gao several times and failed. Every time I try, the center of the cupcakes remains uncooked and the cakes don't rise. Do you have happen to have any hypotheses as to why this happens or any tips? Thanks so much!
It sounds like it is not getting enough heat. Try putting the batter into a ceramic tea cup as it retains heat well.

Rice flour is Chinese rice flour I am guessing not the rice flour from Western markets?
Chinese rice flour, not the glutinous. Although you can purchase them sometimes from the Western markets in the Asian aisle.
