CROISSANT Recipe / Flaky & Crisp Butter Croissant

✔️Dough
3 tbsp sugar [38 grams]
2 tsp instant dry yeast [6 grams]
1 cup fresh milk (lukewarm) [240 ml]
3 cups all purpose flour [405 grams] + extra for dusting
1/2 tsp salt [3 grams]
2 tbsp unsalted butter [30 grams] + approx. 100grams (for interlayer filling)
*eggwash (egg) or milkwash(milk) of your choice.
✏️Note:
1. To prepare the croissant at less time possible, freeze the layered buttered dough for 20 - 30 mins. Freezing time may depend according to freezer level of temperature setting. To know when it's good to take it out from the freezer, once the butter & dough turns cold & a bit stiff & intact, but it should be still pliable to be able to roll it out.
2. If not in a rush, you may chill / refrigerate the layered dough for 1 to 2 hours or overnight.
3. It can be baked at 180C for 20 - 25 mins. or until browned. It can be baked too at higher temp. @200 C at less time for about 15 mins.
I used conventional gas type oven with bottom heat function only.
May alter the baking temp. & time according to the type & function of your oven.

For me this technique is harder but tooks a little bit less time. The normal lamination process is easier but tooks more time

Im trying to make these right now i did some changes like i didnt have butter so i used Philadelphia a type of cream cheese and i didnt leave it in the freezer or fridge because im not patient😅 i made 8 in total 3 of them i made with chocolate:) right now im waiting for it to bake ill write the result!

hi sorry for late the response, for electric oven you can also use bottom heat function only. Hot air rises naman from bottom heat so generally mkkabake ng bread using bottom heat lang. Top heat function is usually for broiling. But i can't say na bottom heat alone is always applicable to all types of oven. But if you want to brown the top of the bread, using both bottome & top heat too is an option, kasi there are oven na di masyado naiispread ang bottom heat papunta sa top.

hi, technically po ang top heat ng conventional oven is used for broiling and grilling. Primary source of heat pa rin yung nsa bottom & nag ra-rise yung heat nya papunta sa top so the bread can be baked & eventually magbbrown sya without using the top heat. That's why most of the breads are commonly brushed with eggwash which helps para magbrown yung top nya and nagdedepende rin sa baking time, sometimes needed din to add up/extend the baking time until mareach mo yung desired na pagkabrown ng bread. It's always a better spot to place the baking tray dun sa middle rack inside ng oven, iyon ay to avoid naman na ma toast/burn yung bottom ng bread kahit mag extend ka ng baking time. Pwede din nman po ireduce yung baking temp. while waiting na magbrown yung top para naman di maoverbake ung bottom. :)

I tried other recipe but i am fail....aftar baking my croissant is to hard....... Why can u tell me
are these a modern recipe, cos i remember back in the late 70s while staying in numerous hotels & b&bs in france, but not one of them ever gave us these for breakfast, it was allways french bread & lovely french jams, which i love, but i hate these, so when i next visit france to go visit notra dam in 2024 i hope they offer me french bread or i,ll be looking for the nearest mcdonalds instead.
