Instant Pot Khichdi | Rice & Lentils Pilaf |

  • Khichdi or Khichari is a combination of rice and lentils. This is a simple dish that is so comforting yet flavorful. Simply saute your favorite spices with onion, add rice, lentils, and cook away. My family always made the drier version with separate grains but you can also make a softer (wet) version by adding more water. This dish is also incredibly easy on the stomach and easy to ingest and digest. Check out the recipe!

    Food Notes:
    - I used two kinds of lentils here. You may use one kind but remember to be consistent with the ratio.
    - Ratio 1:1 grain to water
    - I had 3 cups of grain (2 cups rice +1 cup daal) so I used 3 cups of water.
    For softer wet khichari, apply 1 cup: 1.5 cups (grain to water)

    Watching this in August of 2024 😄
    I’ve only had my Instant Pot for a few months so I’m still getting used to it.
    I had about a cup of red lentils and yellow lentil to use up so I decided to make this today.
    I didn’t have cardamom pods, cloves or button chili peppers so it isn’t as flavorful as it would be if I had those spices but it still tastes good 👍🏻
    I’m still in the process of collecting spices and learning how to cook Indian food ☺️

    Thank you for making a recipe for khichdi that is not so soft or runny. I like my khichdi more like a pulao or biryani consistency

    This was another delicious recipe! Thank you for all your great instant pot recipes !!
    I felt my rice was a bit mushy - do you feel I soaked it too long ? Or maybe need more NPR ?

      So soaking the rice longer will definitely make it softer. Also if the water is a little more than the ratio it will also make it soft. I always try to measure the rice and water using the same cup so the ratio isn’t off. Doing more NPR will make it more soft so I would avoid that. I hope that helps.
      p.s. I have noticed a lot of people prefer mushy khichdi so what you made was perfect! 🙂

      Hi Afshan - thanks for reaching out. Out of curiosity, what water to grain ratio did you use? Since a lot of people also prefer softer grain, I listed ratios for both soft texture and other one for dry.

      @@TheSpiceGenie I used 1:1 water to grain ratio and soaked for 20mins as u had stated. Rice is tricky in instant pot- I might just qpr after 6 mins pressure next time?

      @@afkil8476 hmmm I think the soaking time and the amount of water used contributes to the softness of the grain. I would try to reduce the amount of water first. Also be sure to use the same up to measure, rice, lentils and water. The 6 mins 10 npr gives me good results on any rice dish... sometimes if the water ratio is off then I notice rice becomes softer. So I would definitely try to reduce the amount of water. Hope that helps 🙂
