  • Singapore is a multiracial and multicultural country with ethnic Chinese (about 76% of the citizen population), Malays (15.0%), and ethnic Indians (7%). We also have Eurasians as well as other non-Singapore citizens in Singapore. Given our racial proportion, one would have imagined that our coffeeshops or foodcourts only have Chinese, Malay or Indian food but no matter what, there will always be one stall selling what we term affectionately as Western food. In case you're wondering how a Western food stall looks like in Singapore, just google it and there are plenty of images out there. Interestingly, the Western food we get at coffeeshops or foodcourts are usually marinated in Chinese style. :)) We grow up eating this type of Western food and we love it! My favourite order at a Western food stall is always chicken chop. Roland's favourite is mixed grill because he likes variety. What's yours?

    3 boneless chicken leg - butterflied (roughly around 220g or 7.76oz each)
    3 tablespoons light soy sauce
    2 tablespoons oyster sauce
    0.5 teaspoon sugar
    2 cloves crushed garlic
    A few dashes of white pepper
    Gravy

    20g (0.7 oz) unsalted butter
    1 teaspoon grounded black pepper
    1/3 of chicken stock cube
    8g or 0.5 tablespoon all-purpose flour
    200ml (6.76 fl oz) water
    0.5 teaspoon dark soy sauce

    Which brand chicken stock u used? Knorr or Maggie? Cos I nv used chicken stick cube before.. can use to Msg replace?

    Persons of serving: 3
    Time:
    Ingredients:
    Boneless Chicken Leg X 3
    Fries - 3 people portion
    Buns X 3
    3 TABLEspoon light soy sauce,
    2 TABLEspoon oyster sauce,
    1/2 TEAspoon sugar,
    2 cloves crushed garlic,
    a few dashes of white pepper,
    4.5 TEAspoon butter,
    1 TEAspoon black pepper powder,
    1/3 TEAspoon chicken stock cube / powder,
    1/2 TABLEspoon plain flour,
    200ml (0.85 cup) water,
    1/2 TEAspoon DARK soy sauce,
    some salt
    Steps:
    1) [Butterfly-slice Chicken]
    Put skin down with flesh facing you.
    At the center of chicken, slice knife down to halfway and turn knife 90 degree to butterfly-slice left part and right part. (See 0:59)
    DO NOT CUT OFF THE MEAT because we want the whole meat to be intact.
    2) [Marinade Chicken]
    In a fence-plate with chicken, add 3 TABLEspoon light soy sauce,
    2 TABLEspoon oyster sauce,
    1/2 TEAspoon sugar,
    2 cloves crushed garlic,
    a few dashes of white pepper.
    Mix them well with chicken.
    Put them into fridge and marinate them for at least 2 hours.
    REMEMBER to remove chicken from the fridge at least 30 minutes before cooking.
    3) [Prepare Chicken Chop Gravy]
    Use a small pot over MEDIUM LOW FIRE.
    (Don't turn on high heat because we do not want to burn the butter.)
    Continuously stir while adding 4.5 TEAspoon butter,
    1 TEAspoon black pepper powder,
    1/3 TEAspoon chicken stock cube / powder,
    1/2 TABLEspoon plain flour.
    Continuously stir and cook until gravy turns golden, then add 200ml (0.85 cup) water.
    Mix well and add 1/2 TEAspoon DARK soy sauce.
    Continuously stir to prevent gravy from getting burnt until gravy is thickened to your liking, then turn the heat off.
    Set aside.
    If want more deep colour gravy, can add more DARK soy sauce.
    4) [Pan-fry Chicken Chop]
    Heat up a pan over MEDIUM FIRE and add 1 TEAspoon oil.
    Spread chicken with skin down onto pan and pan-fry each side for 4 minutes.
    Occasionally press chicken down to evenly brown the chicken.
    DO NOT USE TOO HIGH HEAT otherwise the chicken will burn outside with raw meat inside.
    Flip chicken over and make sure it is golden brown.
    Cook the raw side for another 4 minutes. Set aside.
    5) [Fry French Fries]
    Heat up a wok or pot of oil over MEDIUM HIGH HEAT.
    Use chopsticks to see if there is any bubbles appear from chopsticks.
    If there are, add in fries and DO NOT MOVE THE FRIES yet because the crust has not been set.
    Let fries sit for 2 minutes and stir abit, then fry until slightly golden brown.
    About 1 minute before removing the fries, turn the heat to HIGH.
    Then remove the fries while keeping fire on.
    Season fries with salt before serving.
    6) [Fry buns]
    Heat the leftover oil over MEDIUM FIRE.
    Add the buns and occasionally flip it until they are fried to nice brown.

    Chef can you please make Pork Chop and Lamb Chop. I remember having it in Singapore around 15 years back just 2 min walk from Miramar Hotel. It was served with Baked beans, veggies, fries and sauce on top ... its the most memorable food I could remember and instead of water we had Lemonade as it was cheaper than water 🤣

    If you dont have frozen fries, you can make chips from raw potato. Put the cut chips into the wok and cover with oil. Place on fairly high heat and bring up to the boil. Cook until chips are cooked. They dont absorb the oil and come out crispy.

    How I wish I could do the flip like you! hahaha... Thanks for sharing. Just a quick question, with the hot and humid weather in Spore, is it ok to leave meat in the kitchen countertop 30 mins prior to cooking (for both marinated like yours and un-marinated meat (like steak))? I never used to think too much about it, but some friends were like telling me no-no. So hoping to get some insights from experienced cooks like u. Thanks in advance! :)

      Hi Lilian. Thanks so much for watching our videos. Usually before the actual cooking, I will bring the meat out of the fridge at least 15-20 mins before cooking so that the meat will not be too cold otherwise it can’t be cooked evenly. I have been leaving my cold meat on the table to marinate for 30 mins with no issue but please do note that my kitchen doesn’t have direct sunlight - only indirect light. Hope this helps.

    Just made these chicken chops and it was absolutely delicious. It was so simple to make too. The only difference was that I used the burnt bits of the chicken in the pan to make the gravy. 💯💯💯

    I couldn't taste the garlic and the marinade + gravy confused my palate. Instead of garlic, soy sauce and oyster sauce marinade, just season the chicken with garlic powder, salt and pepper. Browning the chicken should create enough flavor and compliment the gravy better than that marinade. Just my opinion.

    Hi chef, I've succeeded the chicken chop but failed the gravy ... not sure why the gravy is so blend after adding 200ml of water. if its too blend what should i add in? more dark soy sauce or pepper?

    When you say chicken leg, I'm guessing its the chicken maryland (Leg + Thigh together) because those look like huge chickens otherwise =) Nice recipe.

    I cut bun half and spread with butter, a piece of burger orange cheese. Put in oven, butter melted. Serve with pork chop, salad & gravy.

    It looks good and easy to make but you didn’t complete the video by showing the complete recipe by pouring over the sauce that you made or dipping the chops in it for a couple of minutes. That should have been the end result which you did not show and that was the most important part of the video.
