I still do use FSX/P3Dv3 because of the addon compatibility, the performance is just super crisp than other flight simulators especially if you don't have the top of the line hardware. Addons like the QW 146, PMDG 737/747/777, or the infamous FSLabs Concorde X are still the goat in terms of realism.
FSX still holds a special spot. Sometimes the overly realistic stuff can be a bit too much. The practicality of fsx with pretty good ATC that sound like real voices is great. I miss the old days when you could fly online without having to join some server. Fs2020 is fantastic too but fsx is still great. Especially considering most PC's should be able to handle it now days. Back in the day it was a big time lagger

I have FSX on my old laptop while having P3D, X-Plane (soon) and FS2020 on my desktop. I can't just not use FSX as I still have the A2A addons. The realism of A2A alone is enough for me to keep FSX even without much of the scenery addons.
MSFS as of now and for some time has a replay mode but you have to go into general settings, experimental, then turn on replay mode and it shows up on the tool bar

Genuinely it would be good all these years later, if they actually fixed the crashing problem the game is and always has been plagued with. You get like 10 or 30 minutes into a flight on any hardware PC, and it just randomly says "nope" and kills itself instantly. No autosave, so you can't go back again and pickup where you left off. A lot of these old games, especially from Microsoft, were plagued with random crash events you literally can't explain. It ain't fun to play the game when your constantly losing all your progress and having to start again on never ending repeat.
Mine will now only allow me to fly for about 10 minutes and it says I need to buy a copy.. I have owned this copy for about 15 years nand just loaded it on a few new laptops as they are replaced.
FSX is really a good game, but my PC is literally so fucking shit that it can only run FSX medium graphics 30 fps ONLY. With some freeware planes, my laptop gets 5 fps sometime because of the detailed exterior they had

Flight Sim 2020 does have a Replay mode, it's in experimental, been in there for a number of years
For all it's amazing graphics, MSFS without the internet-powered scenery is just this with a couple of tweaks.

No. Because it would still run on 1 core. It only uses 512 mb of ram so 64 bit wouldn't do anything. FSX has been cooked since 2016.
