For the chicken:
1 ½ pound chicken breast, cut into 1-inch cubes
1 egg white
Pinch of salt
Pinch of white pepper
1 tablespoon cornstarch
3 tablespoons water
6 cups extra light olive oil, for frying
For the sauce:
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon rice vinegar
3 tablespoons honey
Pinch of salt
Pinch of white pepper
1 cup chicken stock
1 tablespoon cornstarch
3 tablespoons water
For the batter:
1 cup cornstarch
1/2 cup all-purpose flour
1/2 teaspoon baking soda
¼ teaspoon baking powder
Pinch of salt
1 egg
3/4 cup water
For the garnish:
1/2 tablespoon scallions
1/2 teaspoon toasted sesame
