Pickled Red Onions Recipe. Easy!

  • Making pickled onions is a great way to preserve onions or use up onions that are about to go bad. These are a delicious addition to salads, sandwiches, burgers, tacos, hotdogs or even on fancy appetizers. You've probably had them in your favorite restaurant at some point.     Quick Refrigerator Pickled Red Onions
    1.5 cups sliced red onion (any onion will do however)
    2 cloves garlic
    3 tbsp sugar
    1 tbsp salt
    1/2 tsp peppercorns (optional)
    1 cup white vinegar
    Instructions:
    1- Thinly slice the red onion and peel the garlic. Place the onion and garlic into a glass jar.
    2- Add the sugar, salt and peppercorns to a small sauce pan. Add the vinegar and stir until the sugar and salt are dissolved. Place a lid on the pan and bring to a boil over medium heat.
    Stir occasionally.
    3- When sugar is dissolved, allow to cool slightly, then pour the vinegar mixture over the onions and garlic. Place a lid onto the jar. Allow to cool to room temperature and store in the fridge for 24-48 hours before using. Onions can be stored in the refrigerator for 3-4 weeks.

    Hi Stacey.I've watched so many pickled red onion videos lately that my head is spinning. I used to have a great brine but it was lost over the years. I've decided to use your recipe due to it's simple approach and minimal ingredients. People load a bunch of flavors into their brines that finding the taste of the brined item gets hard to do! One thing I've learned when deciding how much brine to make is kind of simple. I gauge it on the mass inside the jar. Sliced onions(lots of air space) I make 75% of the jar volume, and whole onions(less space) 60%, well packed pickles(even less space, depending on the pickle size) about 50%. I make 1 jar extra for a 'just in case'! Any excess brine will never go to waste!
    Living alone I started making a couple of refrigerator ones and the rest I water bath can for later.

    Lol. Your funny, you remind me of me when you say “ the kitchen is so dirty” it’s clean, but I go in to make a simple recipe and look around and it’s a mess a d I only used like five ingredients 🤣 I’m a messy baker/cook

    Hey I made some of these but they’re too acidic and tart, don’t think I put enough sugar, is there a way to fix this?

      I apologize for the delayed response. I think if you add a little more sugar that may do it, but you can also add some water as well to dilute it. I would try adding an extra tablespoon of sugar and or water at a time until you find it works for you. They are supposed to be tart like pickles but everyone has their own preferred tartness. :).     After consuming onions,can we add more onions once with leftover liquid...will that change the quality or taste..

      Hi there! Yes I do this often and it's fine for about 3 rounds but then the juice from the onions starts to dilute it a little too much so then I feel I need a fresh batch. Hope this helps! Thanks for you question.
