Regular A4 printer paper is relatively easy for knife to cut through. With right technique you can cut even if knife is not that sharp. In other hand that catalog paper can be cut without trouble only with really sharp knife

Just got one of these after years of using an oil stone. Is your dressing stone the same as an oil stone?
