I'm so glad I found this video :) My stepdad Rey would always make these for us and everyone loved them but since he passed away 9 years ago, no one has even attempted to make them but today is my day to try :) thank you so much
As an American born and raised ethnic Filipino, this recipe is legit! I just made this recipe, except with 7up, calamansi and banana sauce, and it tasted just like the bbq at those big Filipino backyard parties I had experienced growing up. Thanks for sharing!
My best friends are Filipino twins that I’ve known since I was like 5. Been to countless Filipino parties over the years and I can say without a doubt these skewers are at every single one.
I just got my hands on this golden recipe yesterday. Cut the pork marinated overnight and cooked it today and I had to come back just say that this pork is simply delicious!!!! Whole family loved it!!! Thank you!!!!
Just an quick share... it has been over two years since I first watched this video. And I c ok me back to it time and time again. Family loves the pork with this marinade
For banana ketchup, I'd suggest sriracha for a bit of a kick. Banana ketchup is only used for coloring because it's cheap. Tomato ketchup is a little too sweet. Reduce a little of the brown sugar and use Pineapple juice as a substitute for kalamansi. It's a bit sweeter but it pretty good. We also use the same marinade for a grilled pork belly and serve it with a spicy vinegar dipping sauce or a soy sauce mixed with lime juice with red onions, cut fresh tomatoes and bird's eye chillies. You can serve them with a sauerkraut like side dish using papaya.
I ate a lot of these when I was a kid growing up on Clark AFB. They are sooooo good. Ty for showing how to make these... going to be making these for my wife and son soon.
Hee boy! Restes loins de ça. Avec l'humidité qui a dans ce pays là c'est s'arranger pour être malade solide. Y a pas d'hygiène aux Philippines. Les mouches pondent leurs oeufs dans la viande.
Filipinos know their meat. I do visit the Philippines once or twice a year and meat, especially pork, is serious business. Pork is meat candy, it is that simple. I did enjoy this video .
Hey thank you very much for this, I never had this in my life and I'm about to make it, I wrote a list to make shopping easier. Thx again. Ingredients for Marinade: 3 Cups of Sprite (~720ml) 3/4 Cup of Fresh Squeezed Lemon Juice (about 6 lemons worth) 1 TBSP Fresh Squeezed Lime Juice 1 1/2 Cups of Soy Sauce 1 TBSP Crushed/Minced Garlic 1 1/2 Cups Brown Sugar 1 TBSP Salt 1 TBSP Pepper 1 1/2 Cups Ketchup (Combine and use stick blender for quicker results) *SAVE 1 1/2 CUP OF MARINADE BEFORE ADDING MEAT INTO IT* Pork = De-bone 8lb (4kg) pork shoulder (called pork butt in USA) and cut into 1" pieces (25mm pieces) Should be left with 6lb (3kg) of boneless pork. MARINADE ATLEAST 4 hours, best if overnight. (I recommend plastic bag instead of plate or pan) Skiewer them and BBQ as directed in the video (Baste while flipping)
My take on the recipe: Filipino Pork Skewers Ingredients • 6 lb pork shoulder, cut into strips one-inch cubes, non-uniform is OK Marinade • 3 cups Sprite or Ginger Ale or Ginger Beer or 7Up • ¾ cup lemon juice • 1 T lime • 1.5 cups Soy sauce • 1 T Minced garlic • 1.5 Cup brown sugar • 1 T Salt (or to taste - soy sauce is very salty already) • 1 T ground black pepper • 1.5 cups Catsup NOTE: Reserve 1.5 cup to glaze BBQ meat while cooking Directions 1. Mix marinade ingredients and whisk to combine well and dissolve sugar 2. Lay meat in flat pan and cover with marinade and let sit overnight in fridge (could also use a zipper bag) 3. Soak bamboo skewers 4. Load pork on skewers 5. Grill on BBQ over direct heat 6. Baste with reserved marinade each time you turn the skewers 7. Cook until at least 145F
Hahahaha Ry showing up at the party with A (single) Skewer!!! Saved gotta try this and note to self, slice thinner and ribbon! Awesome video and thank you!
So excited for you! I've watched you for a long time and was surfing for a famous chef's pork skewers and BAM! First on the search was your video! Congrats on your growth, I'm making your recipe tomorrow!
Suggestion for the pork: If you get your pork in a large round portion like in the video, you can slice them into one and a half inch thick steaks, and then freeze them separated from one another for about 45 mins to an hour, depending on how strong your freezer is, and provided you have the space to do so. That way, the pork will be tempered when you cut them into cubes and they will come out with straighter sides so when you grill them, they'll be easier to turn a quarter way. Just make sure the cubes are each facing the same flat side per skewer.
Beautiful color on those pork skewers with the perfect amount of char. I'm going to have to remember to come back to this video and try that marinade Ry! Sounds delicious!
You can actually use the marinade for basting but you have to reduce it in the stove by boiling it at the same time it's gonna get cooked and not raw when you baste it to the meat.
These were a fun cook on my go anywhere put. I enjoyed the flavor profile but, this is a sweeter marinade. Consider cutting back on sugar & ketchup if your audience prefers more savory profile. Still a hit in my books. Thx for share.
I'm gonna be trying that marinade for sure, just as soon as i can right it down, oh and decide where the devil I'm gonna find banana ketchup in the UK!!
I kind of like using Vernors ginger ale because the ginger is so robust and Just because I'm lazy when I'm making skewers like this, I call ahead at my favorite asian restaurant and order a batch of House Fried Rice with all the goodies in it. It makes a great bed for underneath those amazing skewers. Awesome video thx much! :8)
great video. did something like this before. but i took some of the sauce and boiled it down like a glaze for brushing on and dipping. love the vids man.
Those have very nice color. The marinade had to really infuse some great flavor. I'd like to give this a try along with some veggies on another stick. Enjoyed it Ry, and congrats on 10k. WOW !
I think I'm gonna try this over the Labor Day weekend. Maybe make some rice and put some fresh green beans in a basket on the grill. Maybe even add some of that glaze to the green beans. Oh, yeah!
How in the WORLD did you get that grill rack so unbelievably clean?? It looks like brand new or is that a new one?? If not than please share your secret because I’ve never in my life ever been able to get my bbq that clean in my 55 years. Thanks Ry.
Hi Ry. Been enjoying your vids for a few months now. I especially appreciate your affinity for the Weber Kettle, as it is my only current option for grilling and smoking. I have a friendly suggestion/request regarding videos like this one. I often watch on my phone, when I don’t have pen and paper handy to transcribe the recipe while you’re describing it. If you could add a text graphic to the video, or a written recipe in the description, I could simply take a screen shot of that key information to access later. Anyway, thanks for the excellent and entertaining content! I’m planning to start doing cooking videos, also. Some of which will no doubt draw inspiration from some of yours. Would love your feedback! Keep ‘em coming!
I'm not gonna say 'oh looks good' or 'wow looks tasty!'. No. I actually tried doing it - confirmed, good stuff. At the same time i did regular pork skewers (for comparison) which turned out more tender, wonder if it is the soya&salt that keep the meat so firm? No matter - fully recommended. Thx!
Filipino here. You sure as hell can! Typical Filipino party, you’ll have pork AND chicken skewers. You can use boneless thighs cut into skewer sized pieces.
@ Thelrmalburn, pork belly is the number one choice of meat when it comes to Filipino bbq like this because it's much tender. The reason most people resort to shoulder or romp part of the pork is because belly is more pricey compare to the rest.I personally like the belly because I want my bbq to have a lil bit of fats.
Your bbq looks divine!!!! Now, I am hungry. It is good with ice cold beer :)
Honestly, what doesn't go well with an ice cold beer? Cheers!!

Yeah that constant basting sure builds up the glaze. Appreciate you watching, Rus :)

Fun recipe. I wonder how these would do in a sous vide with marinade, then a reverse sear on the kettle …
I think I'm gonna try this over the Labor Day weekend. Maybe make some rice and put some fresh green beans in a basket on the grill. Maybe even add some of that glaze to the green beans. Oh, yeah!
That glaze will go good on anything. If it had an SPF factor I'd wear it at the beach :)
Now, that's funny right there. I don't care who you are, that's funny right there.
Grilling lid off for the whole cook? Looks great. Cheers sir.
Yep, lid off. Just pure direct grilling 🔥🔥🔥

That looks really good and simple.I’m gonna try it this weekend. Going to buy a two pack port butt from Costco and smoke one and skewer the other.
Yes it's correct the marinade helps tenderized the meat.
Absolutely gorgeous. Good recipe too :) thanks
Thank you!
authentic. but i would add crushed garlic in the marinade.
Thanks for the post looks great, brings back memories of Olongapo (monkey meat?) I'll have another San Miguel please lol
LOL. Thanks!
Yup! Had many of these outside of the Ohio bar. VA195
Subic Bay 90 91 these were our go to choice when headed back to the ship after a day of San Miguels!!! These look great!
Nice I am Filipina
I've always had them with oyster sauce in the marinade.
Ry is invited to my party anytime!
Nice job . You really have a great feed. I'm going to try this.
I appreciate those kind words :)
I’m half Filipino I make mine just like that but I add chili flakes too
That would be a nice kick to it :)
You're using lime soda... Somebody has taught you the Filipino way. Heheheh...
LOL. Thanks!
I respect that you have a normal fridge and not the camouflage fridge doors that prevent magnet memories and fast food delivery numbers
Gotta have a place for all the memories from kids, nephews, nieces, cousins, etc... :)

We served it with a lime rice 👍

Can one use this marinade for chicken drumsticks?
Absolutely :)
Filipino here. You sure as hell can! Typical Filipino party, you’ll have pork AND chicken skewers. You can use boneless thighs cut into skewer sized pieces.
Looks good!!!!
It was very tasty :)
What part of the pork did you use shoulders?
Yes.
Would this be good with Pork Belly? Looking for a good pork belly skewer recipe and i feel this marinade would be really good with it.
The marinade would be terrific with pork belly.
