I've had a vortex for months because it makes the best wings but hadn't thought of using it for kabobs. Your modified skewers are perfect for using with the vortex. I will be trying these kabobs tonight. Thanks, new sub.👍
Once again, I’ll put in my two cents... when you’re cooking indirect like this, don’t be afraid of the fresh minced garlic if you’re a garlic lover! Shouldn’t burn like it would over the hot coals. Loved the idea of bending the skewers to go around the vortex like that. You’ve got me wanting to get a Weber kettle now to compliment the highland. If you’re a potato guy, I like to skewer roast baby red potatoes. They get a nice crusty skin and always turn out fluffy in the middle. That would be a great idea for around that vortex with the bent skewers. You could even use that same marinade as a rub.

Great video. With Chinese restaurants and takeouts using high btu gas burners, could you do a video Stir fried Chinese, fried rice etc on Vortex. Thanks Ps I also love Rosemary with Chicken... another great recipe is.. please Google *'Delia Smith Chicken and Puy lentils'* my absolute favourite dish. The red wine in the Puy lentils makes a big difference. Goes great with mixed salad. Cheers!

When using a vortex try your best to let the temps get high. You need to open that vent & get completely open for air flow.
I have a kabob attachment for my napoleons grill rotisserie. Love it. Nice work there.

I think they do make flexible ones, but I had a bunch of skewers so I just decided to muscle them into usable shape :)

I’ve done exactly as you describe without the foil and it works well 👍
I was curious. Have you tried crushing your rosemary before adding it to your marinade? It helps crack open the cell walls to get more flavor out.

What is the desirable temp in the chicken and the beef ?
Chicken is generally 165 and for beef on skewers it depends on how well done you want them.

I love a good stir fry, and the Vortex sure puts out enough heat. I'll look into combining the two :)

I'd have minced the rosemary so the end result wouldn't be huge rosemary leaves in the mouth
