WoW... No Red wine vinegar, so I used a mix of rice wine vinegar and some strawberry "sherry" wine I brewed. This is really delicious, best recipe I've found for beet greens. I'm going to try this wil kale and collards. Bless your Grandmama!....and thank you.
That looks really good. I love beets very much. My Polish/Ukrainian grandmother (baba), made great borscht. I wish she taught me how to make it. She taught me how to make pierogies, when I was a child. Cheers!
Reviewed other RUclips recipes for beet greens and this one is the Best IMO, liked the addition of bacon and pumpkin seeds (hadn't considered seeds, nuts or maple syrup which opens my mind to other variations to the recipe) Thanks for the good info on buying beets as well.

Why are you cutting off the root steams? Heard that the juice then oozes out and you lose some of the nutrients? Is this so? I use the leaves for cabbage rolls and other types of rolls. Have not used the red stems but they too can be uses. All this is great. Beets I understand are good for your blood.
I need to ask you, my root plants are purple leaves and they're pretty huge right now. I'm thinking of checking beets tomorrow to see the size. So are purple leaves the same? And can I replant the roots of the beets?
