Today I mashed up two of my favorite things, broccoli, and the cheesy Gordita crunch, the taco that changed my life as a kid. A way to satisfy both my need for vegetables and the taste of nostalgia I long for this time of year.

Cheesy Broccoli Gordita Crunch Tacos

I'm Coptic Egyptian and one of my favorite vegan snacks during Lent or Advent fasting as a kid was a warm pita filled with sauteed veggies and a butt load of potato chips. It gives off the exact same textural experience and it's oh so good.
Tonight making dinner I steamed some broccoli with unusually large stems, decided it'd be a shame to waste them so I roasted them on the grill, then sliced them very thin and used them in a quick slaw with onions and grilled jalapenos on fish tacos. I cannot tell you how weird it is to see this video in my feed right now.
Sounds very creative and tasty!
Not weird if you’re a subscriber. And not weird bc your phone is always listening 🎉
Lol! I just made Pablo con queso tacos for lunch today and got this video too! And I didn’t use my phone for the recipe either
not what I was planning on doing with the broccoli in my fridge but I will definitely be trying this one.
I think you might be the only person that loves broccoli as much as i do 🥦
I'm huge fan of broccoli. High Five!!!
I LOVE broccoli! This is gonna be a new go to dish for me! LESGOOOOOOO!
@@D-Z321 slight urge to rhyme in response
My dad taught me how to fry tortillas but our family just did it halfway and folded the hot fried tortilla over instead of frying it into a stiffer shape. Thanks for teaching me how to up my game, sir.
I love your passion for food❤, great content please never stop doing you.
We just made this for dinner and it turned out awesome!! Thank you for this great recipe!
Love the love you put into these vids. Thanks
I love this recipe… I’m always looking for ways to eat more veggies and new ways to make them, this is a delicious way, thank you !! 😋😋
Great recipe Stephen! Definitely gonna try it.
I love this !!! I love broccoli sautéed in garlic and oil , till golden you can not beat that flavor !!! I’m going to make this , thank you for the recipe ❤️
Magnificent. Always excited about whatever is being cooked
I always watch to the end. I picked up a lot of good tricks from your technique. thanks. God bless🙏
I bet he's a good lover.
Girl. 😂
This looks incredible
I can't wait for this years Turkey Day video, lol. I did the last turkey recipe last year. :)
well that sounds like an amazing experience. thanks!
Sounds delicious. I will try it.
Wow, I HAVE to try this!
I swear I love this channel!
Great idea! Thank you
These look good. And another great video!
As a mom, I appreciate the use of even the broccoli stock. Made this in combination with ur regular beef gordita and my son can't even tell there's veggies in it!!!
dude my favourite! can't wait to make this
I gotta try this!
Bless you for real! ❤
Duude fall is the time of pumpkin :D
I’m making this tomorrow!
I thought you were gonna shave the stems as the "lettuce" for the topping for the tacos. I think that would be a good idea as well..the only thing missing is salsa or Pico.
I am definitely trying this! I may add some nopales to the broccoli, but it looks so amazing as is.
Tomorrow my family gone eat those tacos. Thank you
I’m sold!! Can’t wait to try this✅✅🇨🇦👋
Looks like another creative combination, Stephen, and judging by the comments people seem to be enthused about making it.
On the cheese, may I recommend block cheese you grate yourself (it doesn’t take that much time for this dish- it melts better and tastes better- and also I think a great combination is extra sharp orange cheddar and Monterey Jack (Tillamook is the best). Thanks for the vid!
& Never Melt cheese & tortillas in A Microwave! It 100% rubber-izes your torts.
> Oven/ broiler/ 36 seconds (at most). Thats what you want.
An Yes definitely ALWAYS Grate your own cheese. That preservative heavy bagged stuff, doesn't melt the same. Other than that I'm gonna have to try making these right now (taco meat from last night, all ready to go)!
Thanks Everyone!
Mmmmm looks good
I loved this recipe and I didn’t have cherry peppers so I replaced it with some sundried tomatoes and some pickled pepperoncini peppers and it was great! I think I like it even better than I would’ve liked the cherry peppers
Interesting concept let’s see how it goes
Love your content 😊😊😊❤❤❤❤
Crazy tagline, but I’m here for it! And hell yeah, I’m not the only one who puts sumac in my taco seasoning. 👍🏼👍🏼
What.Is.Sumac.
From 8:24 sounds like you're doing your best chef John impression!
NICE!
I want this so bad!! ❤
10:33 Calling this recipe "normal". 😂 I get you tho. Looking forward to the holiday run.
I think I'd stir in something like seitan crumbles. Keep it veggie, but get some extra protein. Our co-op (though probably the grocery store too, if it's one that has some vegetarian products) has some national brand that does a good chorizo flavored seitan which would be great with taco seasoning....
There he is
I also buy the dollar store garlic powder.
Ground beef is the healthiest thing about the taco 😂
I don’t think I wanna give up the ground beef! Maybe one of each?
Famously conceived by No.7 in Brooklyn. Shout em out Steve!
Hate broccoli but this actually looked really good, probably gonna end up trying it
Damn I wish I got that sour cream container lol. I end up doing the finger-push off the spoon method lmao. And I love broccoli and cheese so this is right up my alley.
You can mix in a little water, salt to taste and a squeeze of lime if you have it to get a more drizzlable consistency with sour cream.
Im not a giant veggie guy. But this video says ill be haveinf veggie gorditas end of October. Heck yeah brother!!!
I can’t believe you haven’t yet done a creamy shrimp tomato pasta on ur show… ;)-
Small disclaimer: elephant garlic is wayyyy milder than regular garlic, so, if you're a garlic fan, skip that crap and use regular garlic cloves.
Can't be certain if Stephen is actually elephant garlic, but it sure does look like it as I've never seen individual cloves that massive.
Steve, Wow! A veggie taco, well done!
Was gonna do a sponsor block tag but somebody already did it 10 minutes in haha
I don't mind broccoli but it's not my favourite veg. I prefer cauliflower, My son loves li though. I'm wondering if you could do this with cauliflower?
BETTER with BROCCOLI...Almost EVERYTHING 🙄🍻🤘
UPVOTED!
I'm a bit older, so the cheesy gordita crunch came along well after I had given up fast food, however we had a local chef who made an "elevated" version of it and my God was it good. I don't think his was quite as "healthy" as your version, but I guess I did kinda miss out on something lol.
Next week is the turkey video but no Halloween video???
😢 had to end sometime but it was good while it lasted 😩
Never heard of sumac as a spice. Honestly I’ve only ever heard of poison sumac…
Same
It’s used in Turkey and Lebanon, maybe other countries. It goes with lamb and foods like garbanzo beans, eggplant (baba ganuosh ) and spices like Za’atar and mint, pomegranate syrup, shawarma (chicken or beef) - it’s popular in Muslim & Arab countries (I am neither, so I’m not an expert, but I have used it.)
It’s pretty cutting edge of Stephen to use it in a Gordita, I think! It tastes a little fruity, a little tart. I’m experimenting still.
👍👍
😋
eyyyy mr "rigotta"
Poblanos pepper give it a “WAY BETTER” flavor than the cherry pepper
Braccos
AKA Broccos
Its fugazi but it looks good though
No credit for Tyler?
Remember, “dice” is already plural, so there is no need to add an s to it. Thanks!
This is a great recipe and Taco Bell doesn’t use meat anyway 😂
Crushed wood with animal fats.
#TacoBroc...👍🏼 But WTH is Sumac???
oh yes great, if you do enough for one person...not a great after work meal. too much time...?
Here before some jit c9mments "first"

I wonder if this is how an Indian feels watching someone cook Japanese curry. No hate, it's just a little strange seing what the humble taco has evolved into.
A few tips from someone who cooks a ton of Mexican, and American style Mexican food. Above all ditch the mexican cheese blend. Grate you cheese of choice fresh, munster in a good cheese for melting, while cotija or sharp cheddar (or even parmasean) are great for topping. If you have a Mexican or Central American market nearby, try "Oaxacan", "Central American" or "Salvadorean" cream (they're basically the same thing), it should be thick like sour cream and a little yellow. Finally try adding some chile powder into your spice mix, if you dont want heat try mild New Mexico or Guajillo chile. Mexicans commonly use a mix of Guajillo, Ancho with a bit of cinamon and clove, look up a birria recipe for proportions.
I might try this brocoli mix for more traditional tacos, but it might need a little more to satisfy without the cheesy gordita. A little bit of chorizo or bacon might work. If you want to keep it veg maybe some nuts (walnuts or pecans) and some dried fruit like raisins or apricots could add dimension.
He did use chili powder- it was a pre-made mix.
I always start with *ancho chili powder, them make my own mix by adding cumin, coriander, Mexican oregano, paprika, New Mexico hatch chili powder, chipotle powder, garlic & onion, cayenne (I pass on the cinnamon for most applications), salt….it’s good to make enough to store it for next time you need it.
What kind of brocolli are you eating that you're getting "gross brocolli flavors"? lmao
i really hate broccoli not gonna make this one
That broccoli would still be hard even if it doesn’t stink like boiled stuff
With zero protein I’d be hungry in about and hour
Uhhhh sure, buddy
No
sad face recipe
I'm usually with you bro but...
Its interesting how he praises cheesy gordita crunches texture(agreed) and then immediately says add brocoli; arguably the worst textured food known to man lol
But his knife game saves everything?
I have enjoyed the channel, but this kind of thumbnails are not the best choice.
Just present the dish as its own would be better.
You've lost your mind.
Love ur content bro but where is the “Gordita” aspect in all this?
WRONG
Okay Steve, that's the final straw!!!
Can no one stop this monster?
First, he starts subjecting us to thumbnails of his gaping monstrosity of a pie hole. Now he's moved on to intros that start with that same grotesque shot of him stuffing his face.
I have no idea if the gordita crunch in this video is a good recipe and presentation. I didn't get beyond the first 3 seconds.
Aaaaand I'm out. Unsubbed. These thumbnails are so nasty I can't see them pop up on my screen anymore. I hope one day Stephen gets back to his roots because his old videos are amazing.
😂😂😂
As a Mexican I feel insulted that you call something with "Taco Shells 🤔" a taco. Taco is with soft tortilla, period. About the filling 😣😣.
Brother, who cares about what the fillings are? He uses soft tortillas too. It's a matter of blissful texture
It's not that serious 😂
Get a grip
Your life must be a cake walk if you’re “insulted” by what someone calls some food
I'm sure you're insulted by most things that don't require that much thought.
Pizza? Now that’s what I call taco.
