- For sauce i have used:-
4 tbsp soy sauce
3 tsp vinegar
Honey
3 tsp sugar
3 tbsp water
Chili flakes(optional)
Ginger
Garlic

You can marinate the chicken small pieces in this sauce from night before or before you leave for work. I then squeeze sauce or drain, fry chicken then add sauce. Make a slurry of cornflour/arrowroot, and pour into pan to thicken the sauce. Serve on fried rice or boiled. Top with fresh spring onions/fried shallots. I usually fry a few beaten, seasoned and sesame oiled eggs into wok/pan first, remove and thinly shred. This can be put on top of meal as a garnish or served on the side as extra protein.

i dont make homemade sauce but i use kikkoman sauce
You aren't going to marinate it first?
DO NOT add water to the mixture, as this just proves you don't know what you are doing.
The only exception is when you are making a corn starch slurry, then adding to the sauce to thicken it. All you are doing here is watering down the entire sauce.

The only sweetener in real teriyaki is mirin. Honey and sugar are right out. Not saying this isn't delicious, but it's imitation teriyaki.
