I’m glad you are on YT. It’s the New Frontier of the culinary world. Even OG chefs like Lidia are launching new episodes made expressly for YT, not just reruns of their old pbs shows. YT is all about the home cook, the self-taught- the ones who have restaurant background maybe. It’s stepping away from the game show, reality show, aspect of Food Network and competition shows which it has become. People want to learn how to cook something delicious and are turning away from the elitism of chefs at high end restaurants. It’s “Cooking for everyone,” for the regular working folks, not so much for the uber wealthy. Stephen, we so appreciate you! Keep up the good work!
If you want to get closer to the flavor of naranja agria (sour or bitter orange), mix some grapefruit juice with the orange and the lime juice. Also, get the least sweet orange variety that you can find, look for tart ones. And, by the way, you can say carne adobada or cerdo adobado, either way is correct, depending on the noun you’re modifying. As for the marinade itself, it’s called adobo.
Pro tip: don’t boil the chiles to death. You will lose some punch of the flavor to the water. Just soak them in the hot water till they soften. You’ll get a better flavor/color ❤
Amazing recipe. We made this for staff meal where I work and honestly, it was so good that no one said a word while we were eating because everyone was so focused on the food. We used ground pork mixed with ground short rib, which is what we had to work with that night, so I think it's safe to say you could use ground meat at home, too. (Also, we threw some of the salsa in with some cooking rice to make a sort of pseudo-Mexican rice, which turned out really well.) 10/10!
If you’re going to make your own tortillas, you should get your self a tortilla press. They turn out so much better. And that dough definitely needed more water.

Those tacos look amazing and would love to eat them. I would recommend one thing when making the tortillas, I know my Grandma, mom, and Tia's all add lard to the maze when they make tortillas. It add soooo much flavor to it. I still would love to try your tacos

Chipotles are dried jalapeños, that are then smoked. They can be stored like this; chipotle seco; in vinegar; chipotles encurtidos; or in a chile sauce, chipotles adobados.
Lime tip! The paler ones are actually more ripe! A tree ripened lime is yellow! USDA grading ruins them by specifying that they have to be green (unripened!). Yellow is sweeter and juicier.

Great tutorial. I definitely want to make this. Also: great tip about picking out good limes. After a day or two they are way too hard and dry. Now I know how to pick the best ones!

Try adding a half of a Roma tomato finely diced to your guacamole 🥑. My mom always does that as her mom and grandma are from Mexico.
I got to try Los Tacos No 1 for the first time last week. Excellent. The al pastor tacos were the stand outs. Absolutely flawless.

FYI, the "lime" that's added to corn for nixtamalization isn't lime fruit juice, it's lime stone - Calcium Hydroxide, which is alkaline, not acidic.

Tip: Add one tomatillo to the avocado, as the acid in the tomatillo delays the oxidation - or browning - of the avocado or guacamole.
