Every respectable home should have a deli slicer at home. Lot of the homes in Europe have it, most of them in Germany. Vacuum packer that he has is professional, though. I have the home version. Just makes life easier when preserving food in fridge or in the freezer.
Tbf the truffle he is cutting up there is probably the same price as any of those two apparatus would be when bought second hand. (Sorry for my English.)
I just wanna say that i live on the other side of the continent and half of the ingredients that Marco cooks with will not be found here unless you have a lot of money. I watch his cooking videos because they're cool and funny. He's got that crispy voice that I really enjoy and he is so soft spoken. It's very calming and he makes cooking look so beautiful. It's his choice to make cooking look beautiful but you know what i mean.

Cheese that doesn’t contain animal rennet. So still dairy but not containing any animal. For example real DOP Parmesan is not suitable for vegetarians, although I find some vegetarians don’t really care about it
If most people don't have a slicing machine, why don't you just show us how to cut it with a knife? No one's going to make this dish either way. If anything, you would just lay all the slices down and bake it and not bother with the stacking.

Technically sous vide is the cooking of the food in warm water, regardless if it's vacuum-sealed or uses a sous vide regulator.
