I like how so many things Marco makes in this series seem to be large, mound-shaped food that nobody could comfortably eat, while he keeps repeating "because remember, it's all about the eating." Delicious.

Marco Pierre white is one of the most idiosyncratic and particular chefs living today. And the most meme-able. It’s his choice.

This is one of the most wild Marco videos in a while! It's got supersonic chopping, vague philosophical musings about the experiences of eggs in pans, and declarations of superiority over your appliances. Most hilariously is the PSA about fryer safety followed up with "Oh you've burned yourself in hot oil? GOOD. If you're not willing to accept the possibility of injury then get the fuck out of my kitchen". The crazy thing is, I'm completely on board with every word he says.

Just some ideas. Stress the importance of using soil raised winter-chicory (andives are a different vegetable I think), not chicory raised in aquaculture. Aquaculture chicory has no character, no depth. Not necessary to add sugar to chicory, as heating the vegetable will enhance its sweetness. Best chicory is forced (and purchased) in late fall or winter. Use ripe pears (coming in season also in autumn), silky as butter, sweet as sugar, just warm them, cooking is not necessary. Reconstructing chicory with salty soft cheese is a grandiose idea! Walnuts, I would parboil them, so removing the tannins that can be too harsh. Great dish. Typical for Belgian and French Flanders.
I love you Marco. But I prefer my eggs cooked. It's my choice really. 😌

Marc said that most people whisk their eggs, so they turn into baby food. His eggs look like something you'd feed an old person with no teeth, except for the toast. Marc broke up the curds too much and cut the salmon too small. I think Marc forgot he has teeth. People with teeth have money. People with no teeth are on a fixed income.

After watching this video, I saw how Jacques Pepin makes scrambled eggs. He took the pan off the heat several times. While the eggs were definitely French-style, they were not runny in the least- like the slop Marco tried to demo here. Full-tilt-Marco, indeed.
