Since semi-retiring, chef Marco has achieved truly an ascended philosophical view of cooking and being a chef unlike anyone else at the moment. The no Fs given attitude and acceptance of imperfection as truth is a sign of a true master that has nothing left to prove to the world.
I don't think he's the only one who realised this. It's just that he can afford to say this now that he's retired. Gordon probably doesn't differ too much from Marco's philosophies, he has a few videos where he just cooks a meal for his family with his kids, pure chill. When people watch TV they want to be entertained though, they want to see Gordon shout at people. And so he delivers. But I don't think in the slightest that Gordon actually is that furious, it's just a show.
Basically every chef can teach you how to cook. But I haven't seen anyone else focus so much on giving you the confidence to cook. That's what makes Marco unique, he drops all the fuss and makes high quality cooking actually achievable and not intimidating at all.

I get anxiety just by watching Gordon cook. However, Marco is calm, precise, and explains everything in a concise manner. The contrast between the two is absolutely amazing, considering Gordon was Marco's student at one time.

It's always a joy to watch MPW cook. Be it in his prime during the 80s, his time on television with Master Chef, his Knorr sponsorship videos, or now with his BBC videos, I always learn a little from his work. I love the person Marco’s become. It seems as if retiring has lifted a burden off his back. He seems a lot chiller now and not angsty at all. He’s grown wiser.

Has has issues with drugs, shoplifting, racism and so on. Looks like he used his fathers celebrity status to try and get into the celebrity world and went on big brother in 2016. As far as I can see he was sent to prison for a shoplifting spree as well as possession of a knife and heroin. Apparently he has since converted to Islam and vows to stay clean which is good. However the whole Islam thing seems a bit meh, he’s been seen drinking alcohol more than once which is forbidden so take what you want from that.
He didn’t show us how to cook, he teaches us to be a master like he is. He’s a master with very deep thoughts, emotional intelligence and kindness more than just a chef! Everytime I watched him, nothing came out of his mouth but encouragement, enlightenments and kindness. All those years ago, when I first saw him on that late-80s fly on the wall TV show that he seemed to despise, all I could see was a magician casting spells. He is great - possibly the greatest in terms of utterly applied knowledge combined with unique flare. Amazing man.

A couple years ago, I invested in being prefessional cook. Went to college, had a lot of lessons and finally had a job opportunity at a famous restaurant in the region. I was so anxious about it, I had prepared for that moment, I knew it would be harsh, but nothing really prepared me until I had stepped into the kitchen and worked there. Then it hit me, all I've done, learned and prepared meant nothing. I was so sure that I wanted to be a profeesional chef that I let it distract me, and after a month, I left. Not because I gave up the kitchen, but because I tried to turn something that I lovend into a profession, and that was my mistake. My entire life I heard "Work with what you love, and you'll never work", mut it does not apply to everything. There are some things that if you turn into a profession, it loses the flavour and you may feel stressed and/or down because of it, took me a while to learn this, but now I can proudly say that cooking is one of my favorite things in the world, so if you're feeling down because of something like this, take a moment to breathe, and try to do it for yourself before you do it for someone else.
I was a chef for 4 years, working tirelessly in restaurants from Bistros to Michelin Starred ones. You are spot on that Cooking as a hobby and a profession is 2 very huge different spectrum. 1 Year ago, I decided to start afresh as a UX Designer and rediscovered my love for cooking once again. I hope to all chefs out there that are experiencing the urge to quit and try something new, Do it, the sunk cost fallacy is not as big as you picture it to be! This industry is definitely harsh and difficult but quitting is not something to be ashamed about. Its tiring enough to stand 14 hours a day/ Working without breaks/ Getting shouted at by your Chef de Cuisines/ Barely have the time to laugh and cry with your loved ones......have some pity at least on your body and mental health.
So what are you doing now ? I felt the same, i almost dropped my education to study cooking and become a chef, but I think I won't like it as much as I like cooking at home, for me and my loved ones. I love cooking from the bottom of my soul, but becoming a chef doesn't seem to fit what I want.

Made this tonight and it was amazing. The refreshing acidity and sweetness of the piperade was a great pairing with the salmon, and Marco's approach with the quick cooking to retain freshness and the passata is the key. I added some cayenne and paprika to it which was very nice. Shallow frying the salmon actually made a huge difference, it came out very tender and not dry at all. The basil on top was a nice garnish that added great contrast. Paired the dish with crispy roast potatoes but I think some simple couscous or even buttered fingerlings would be good too. I used too much oil in the piperade, next time I will use less

It’s not so difficult to chop without looking, if you’ve made a habit of guiding the knife with the side of your fingers on your left hand, I’ll do it without really thinking about it, and I am nobody at all …
@@itsamiracle9740 Usually there is no need, and clearly Marco is lightyears more proficient in every way related to cooking, but yeah for a shorter burst I could probably get close without looking, the technique itself is not really about the speed, if you can cut fast while looking you can also more or less do it without doing so, the speed or precision is not in the visual cue, it’s in automating the basic movement and consciously guiding with your left hand, resting the knife blade against the flat part of your fingers in a vertical angle and curling back your fingertips as they hold on the food item, so they don’t get caught. That way your fingers are never near the cutting edge and you can go by the feeling alone once it’s automated. The movement of the left plays a key part in how thinly things are sliced as well. Usually the thinner the faster because there is no sideways “jumping” with the knife to break the rythm it’s just a steady progression, like a machine. I am not in the cooking business but should think most cooking professionals with a bit of experience should be able to do this, it’s more or less the only truly efficient and relaxed way to chop a lot of produce, regardless of whether or not you are looking at what you are doing.

As far as I can see he was sent to prison for a shoplifting spree as well as possession of a knife and heroin. Apparently he has since converted to Islam and vows to stay clean which is good. All those years ago, when I first saw him on that late-80s fly on the wall TV show that he seemed to despise, all I could see was a magician casting spells. A couple years ago, I invested in being prefessional cook. Went to college, had a lot of lessons and finally had a job opportunity at a famous restaurant in the region. I was so anxious about it, I had prepared for that moment, I knew it would be harsh, but nothing really prepared me until I had stepped into the kitchen and worked there. Then it hit me, all I've done, learned and prepared meant nothing. I was so sure that I wanted to be a profeesional chef that I let it distract me, and after a month, I left. Not because I gave up the kitchen, but because I tried to turn something that I lovend into a profession, and that was my mistake. My entire life I heard "Work with what you love, and you'll never work", mut it does not apply to everything. There are some things that if you turn into a profession, it loses the flavour and you may feel stressed and/or down because of it, took me a while to learn this, but now I can proudly say that cooking is one of my favorite things in the world, so if you're feeling down because of something like this, take a moment to breathe, and try to do it for yourself before you do it for someone else.
I was a chef for 4 years, working tirelessly in restaurants from Bistros to Michelin Starred ones. You are spot on that Cooking as a hobby and a profession is 2 very huge different spectrum. 1 Year ago, I decided to start afresh as a UX Designer and rediscovered my love for cooking once again. I hope to all chefs out there that are experiencing the urge to quit and try something new, Do it, the sunk cost fallacy is not as big as you picture it to be!
This industry is definitely harsh and difficult but quitting is not something to be ashamed about.
Its tiring enough to stand 14 hours a day/ Working without breaks/ Getting shouted at by your Chef de Cuisines/ Barely have the time to laugh and cry with your loved ones......have some pity at least on your body and mental health.

So what are you doing now ? I felt the same, i almost dropped my education to study cooking and become a chef, but I think I won't like it as much as I like cooking at home, for me and my loved ones. I love cooking from the bottom of my soul, but becoming a chef doesn't seem to fit what I want.

The greatest cooking personality of all time
Made this tonight and it was amazing. The refreshing acidity and sweetness of the piperade was a great pairing with the salmon, and Marco's approach with the quick cooking to retain freshness and the passata is the key. I added some cayenne and paprika to it which was very nice. Shallow frying the salmon actually made a huge difference, it came out very tender and not dry at all. The basil on top was a nice garnish that added great contrast. Paired the dish with crispy roast potatoes but I think some simple couscous or even buttered fingerlings would be good too. I used too much oil in the piperade, next time I will use less

@@itsamiracle9740 Usually there is no need, and clearly Marco is lightyears more proficient in every way related to cooking, but yeah for a shorter burst I could probably get close without looking, the technique itself is not really about the speed, if you can cut fast while looking you can also more or less do it without doing so, the speed or precision is not in the visual cue, it’s in automating the basic movement and consciously guiding with your left hand, resting the knife blade against the flat part of your fingers in a vertical angle and curling back your fingertips as they hold on the food item, so they don’t get caught. That way your fingers are never near the cutting edge and you can go by the feeling alone once it’s automated. The movement of the left plays a key part in how thinly things are sliced as well. Usually the thinner the faster because there is no sideways “jumping” with the knife to break the rythm it’s just a steady progression, like a machine. I am not in the cooking business but should think most cooking professionals with a bit of experience should be able to do this, it’s more or less the only truly efficient and relaxed way to chop a lot of produce, regardless of whether or not you are looking at what you are doing.
Marco is the best. Can honestly say he is the reason I love cooking today.
