When I was a little boy...my father would take me into the mountains...and we would hunt for the perfect Christmas Tree. He wouldn't chop it down with an axe, he would throw cheese at it. Generous amounts of butter, olive oil...and then we would walk home. It was as simple as that.
I love how he doesn’t oversell this. He knows when he’s making michelin restaurant classic dishes and when he’s just making some random stupid shit (which he still manages to make look like a masterpiece because he's a world class artist at dressing a dish, making it look beautifully presentable at breakneck speed)

I love that he emphasises that cooking is not the slavish following of recipes but also the skill and creativity of the cook… Marco was a true master of cooking when he was younger but now he is a grand master. He transcended the flash and pomp and reduced cooking to what it truly is: sustenance, enjoyment, passion, life.
