Stephanie Jaworski of Joyofbaking.com demonstrates how to make Fruit and Nut Bars. These Fruit and Nut Bars are decidedly different from the other bars and squares on the site. Crisp and chewy in texture, they are full of dried fruits and nuts, that are held together with a batter that contains no butter or oil, just one beaten egg. These make a healthy to-go breakfast, a great snack to pack in lunchboxes, or they would be perfect to take along on your next picnic or hike.

I tried the recipe and improvised with what i have in the fridge. I used walnut, almond slices, almond meal, cashew, oatmeal, raisins, cranberries, dates and the outcome was pretty good. Then I broke some of them into big chunks, melted some chocolate, mixed them together, spread on oven paper, put into the fridge to set and cut them into bite size. It was amazing! Thank you so much for sharing this recipe :)
Delicious, thank you Stephanie. I used coconut instead of the choc chips. Just a hint for anyone making these - be sure to really press it down into the pan prior to baking, otherwise it will be very crumbly when you cut them. I'll be making these again!

Hi Stephanie thank you so much for the videos. I love how you present your recipes. Your instructions are clear and concise. You showed the end result of each process for example the beating of the egg. Its visual and for an amateur baker it is very important. Not many instructors do that. I made these for the kids since they're on spring break and I know they're gonna want something to snack on. They're very delicious. I used prunes, dates, craisins, almonds, and pecans. I definitely have to make these again because I'm going to end up eating the entire thing by myself.

I made these bars today. However, I used only nuts as I needed to use them all up before they expire. And I tweaked the recipe a little further by switching the flour with Oat meal (which I blended till fine) and sprinkled toasted sesame seed on the top, and used dark chocolate chips. The texture was right, but it wasn't sweet at all. Because it's all-nut bars, I should have increased the sugar in the recipe. And maybe use milk chocolate chips for extra sweetness. Without the dried fruits the amount of sugar in current recipe is insufficient. The solution is to drizzle caramel sauce or icing sugar before serving. Other than these observations, it was so easy to make these bars. I'll make them again definitely. Thanks Stephanie for this easy bake recipe.

I have baked these bars many times and they are great! I enjoy Brazil nuts and almonds and pecans or walnuts for the nuts but try other varieties, too, and feel they don't need to be preroasted as they are baked 35 or 40 minutes. They are wholesome, delicious and not loaded with sugar! Thank you for sharing this and other good videos!
I made these tonight. Delicious! my nuts of choice were hazel, walnuts and pecans. My fruits dried cherried, dried blueberries, candied orange peel, medjool dates, milk chocolate chips dark brown sugar. They came perfect. Great recipe. Thank you. 🥰

I just made this about an hour and a half ago, they’re cool and cut up now, and delicious. Kiddo, and husband approved. I don’t know how long they’ll last. I guess I’ll have to make more. The only changes I made, were upping the baking soda to 1/4 teaspoon, and using half a teaspoon of vanilla powder, because I did not have extract. Additionally, I added an additional egg, because the mixture seemed impossibly dry without the liquid from another egg. It was the right call, the bars were perfect, I changed nothing else, I used peanuts for the base nut, next time I’ll try walnuts, or maybe almonds and pecans. Yum. Thank you so much for this recipe. It reminds me of recipes from vegetarian cookbooks from about 100 years ago, take a look, you might be surprised. Happy baking.

It is my second time to make this easy and brilliant recipe. This time I have added coconut shreds and various other nuts and fruits. I made it for my hubby (for me too) as he buys the manufactured ones that are not healthy, greasy and very sugary. He loves these squares (me too, lol). Lol , checking youtube for days to find a normal recipe 4 these bars yet all i found was gluten , egg , etc free untill this night . Thx for sharing ! I m gonna try these , by the sight of it they are already a little bit like those grany bars , more like cakes or very soft chewy cookie bars mmmmm

In place of egg I would do peanut butter and date paste to bind it. Just me.

I have a food forest in my back yard and started making fruit/ nut bars. But i grind my berries up to a slurry( the process removes seeds and stems too) and roast/flour almonds and hazelnuts. I mix it all together and it looks like cookie dough. I bake then dehydrate the bars and it gets pretty solid. I haven't tried the large chunk stuff yet. The mix i make is hazelnuts/almonds, with Currents, honeyberries, seaberries, black raspberries, mostly. But i have a few other things i add in. Sometimes apple/pears.

After watching your amazing videos I looked into getting a stand mixer and found that the Kenwood you use is the best. For my birthday my husband surprised me with a gift certificate to choose the mixer I wanted. I had enough birthday money to get the Kenwood Chef XL and absolutely love it. Thank you for answering question about your mixer. Well worth every penny and it's getting alot of use. Can't use the mixer on this recipe for fruit and nut bars but will make this for my grandson's snack in his lunch. This is the kind of food kids should be eating and I love these too. Thank you.

Hi Stephanie thank you for super easy and delicious fruit and nut bar recipe. Can I substitute egg for something else.I added sesame seeds, coconut, pumpkin seeds,and sun flower seeds and added 1/4 teasp salt and it was delicious. Thanks again.
Applesauce is usually used in place of egg in most recipes but it does not thicken up like egg does when beat are you vegan you might try agar agar in it but if you are allergic to egg I would try the applesauce but you will need twise as much to make up the volume unsweetened
Hi Stephanie, thank you for sharing healthy bars that also look yummy :) I'd like to throw in some flaxseeds or pumpkin seeds or, well, seeds. Do you think they would ruin the structure of the bars, and if not should I replace some (how much?) of the nuts or I just go and add them in? Thank you very much, bring more of these inspiring healthy treats as I won't ever trust those fitness recipes out there more than I trust you :)
2 tbs of flexseeds can substitute 1 egg for consistency

Thanks, this is a very nice recipe. I changed it to make it more diabetic friendly, and it worked very well.. i do not use aluminium foil though, it has too many health risks, but replaced it with wax paper. It does the same job. Thanks

@@jasonmonteiro6027 Hi Jason, I replaced the brown sugar with non-nutritive sweetener, like Xilitol. Also made sure I used nuts and dried fruits that are recommended for diabetics. Hope this helps.
