    Who filmed this?! Don’t they know how to point a camera at the subject? Why are we staring at a restroom sign and trade show drapery, rather than seeing the speaker and screen? Crazy!

    I thought the same at first but I'm thinking the menu content was off camera on purpose because he is consultant and probably wants to gain paying customers. Just a thought...

    You need to figure a average commodity cost for the year then add 5% for annually food cost increase. How often do you, print menus? this is when you can do price changes.

    One word of caution before you sit through this entire video: Nearly everything being said only applies to cheap low end restaurants. If you are in fine dining, move on. Nothing worthwhile here.

      I can't condense the answer into a paragraph. In (very, very) short, a fine dining restaurant charges much more money per dish, so the economics are entirely different.

      The majority of food establishments are not fine dining, hence why he addresses the majority and their needs to improve layout/costs etc.

    What crap. The phrase "I may love a menu item, when it vanishes I will substitute". Restaurants do this monthly, yet my food allergies may not align and the restaurant loses the business and my family walks out with zero sales, never to return. I'm glad the world has cast iron bellies and can eat anything. This is the death of restaurants. I've seen it first hand, eliminate the poor sellers for profit not realizing only one person in a large family needs that item, then to loose the entire food chain of that family. Stick to what you know, do it well and provide the menu ongoing. The elimination of one item can doom ten or twelve weekly seats at your restaurant. I have seen multiple restaurants fail weeks or months after they short sighted changes. My family still spends thousands per month at restaurants, but it is only at those places that provide food products we can consume. So take this ill advised suggestions of this video at your own peril.

      Same for vegans (many also lactose intolerant), decide where the group eats. If they can eat nothing, whole group goes where they can all eat.

      At first I was dismissing your comment. I’m glad I read it all because it reminded me how many time I’ve had customers say how glad they could all eat or they come to us because of certain items that one person can enjoy.
