It’s so interesting to see how differently Daal is made. I’ve never used a blender, personally my Daal comes out creamier and my steps are different. Love seeing different variations!

The Roma tomato cultivar (variety) group is one of, if not the best cooking tomatoes, and in general are really versatile fruits. Things like fresh Roma, or even better, San Marzano are really good, firm flesh, drier than slicing tomatoes, better texture and a lot of flavour. Often times tomatoes can be watery and grainy, which is also not ideal when cooking, not these... ..they are also quite resilient varieties, which also have thick skin, giving them a slight advantage in the pest resistance category. To prep, often what I do is I blanch to remove the skin, and remove a portion of the innards. Thank you for listening to my TED-Talk.
I am Indian Indian (not Indian American) ...(and I'm vegan) and i can't handle spicy food not even medium.. it's Probably cuz of the fact that my mum never made anything spicy..so didn't eat a ton of spicy growing up... We eat bland food (which is not bland to me..has ton of flavour from whole spices and the vegetables itself....no need for a chilli in our food.. everything is perfectly seasoned tho..just not overpowering or "in your face" kinda stuff..) But throat starts to burn instantly if i eat outside.. so we eat mostly homecooked..and I'm super proud of that

I think I'll just call garlic cloves "glarves" now, which I know is different than what she said but I wanted to make it more of a portmanteau. When she said "measuring stick" I had to crack up because I'm totally the kind of person that forgets a common word like "ruler" then just make up my own thing.

It's officially a crime to cook an Indian salty food without adding turmeric to it.... We don't add turmeric in our food when someone has died at our house

Try a dal with and without tadka and one can tell the difference. The tadka makes a significant brightness and flavor to the dish.

You should ideally add dried red chilli in the tadka and then finish it with fresh coriander leaves...coriander is big in Indian cooking
