    I had a really emotionally challenging day. Nothing serious just job, money, and feeling unfulfilled in my life and career. I watched this video before I went to bed and it made me feel so much better. Emmy you are wonderful, sweet, so smart and cleaver, and I could listen to your voice for hours (and have)! Thanks for making me bad day feel less bad!!!

      I had this same thought! She's the only RUclipsr I can watch on full volume on my phone and sometimes wish I could make it a little louder. But I think her voice is really calm and soothing and I enjoy hearing her speak lol so like you, not a complaint

    We raised ducks when I was a kid and the color of the yolk is almost entirely dependent on the diet of the bird, whereas the color of the shell has more to do with the breed. The feed also influences the taste, which would be why the penguin egg tastes fishy. I like to think that everything in the ocean tastes more or less like seaweed since almost everything in the ocean has seaweed somewhere in its food chain. I preferred the eggs from the ducks who ate primarily corn. The yolks had a bit of cornmeal flavor to them. I've heard that certain factory farms feed their birds coloring agents to make the fat yellow, and that would also change the yolk color. I believe Perdue claimed their color is from marigold petals. Could be why the chicken eggs are more orange.

      My brother's girlfriend keeps chickens, so we often get eggs from her. It's interesting how much the taste varies from storebought eggs.
      I'm trying to convince my family to stop getting eggs from the store and start getting all our eggs from her, because I much prefer getting eggs from chickens that I know are well cared for.

      I have pekin ducks and the yolks of their eggs are VERY yellow, almost more so than chicken eggs. They pick around in the yard quite a bit and get a lot of protein. The eggs are great for baking

      Deku Kitty her chickens are probably allowed to roam free, and they eat bugs and table scraps and such, so they have more flavor than chickens that only eat grains or pellet feed. When they eat bugs and get to forage for food their eggs are such a wonderful orange color, and taste amazing.

    Whenever I feed my chickens fish, their eggs taste fishy for a couple of days afterwards. I often make them 'special treat' meals that are really just random stuff I have on hand, all mixed together lol. They love it. Oats with sunflower oil, chopped Brazil nuts, boiled pumpkin skins, vege scraps, strawberry tops and chilli stems, spinach and rocket from the garden that caterpillars or grasshoppers got to, the last bits of yoghurt scraped from the tub so I can recycle the container, leftovers, and a couple of cans of tuna or sardines all stirred up in a big Tupperware container and left on the ground for them. Wattles and flecks of food flinging and flying everywhere, hilarious to watch them gobble it up in a frenzy 😂 You can tell who managed to pig out and who missed out by the flavour of their eggs afterwards!

      Confuzed Graphite No animal is being hurt either, laying eggs doesn’t hurt the animal, and the animal inside the egg isn’t a thing yet.

    The quality of the yolk is actually an indicator of the laying animal's diet. Pale yellow yolks indicate a diet that included a lot of grains and yellow vegetation (corn, grain feed) whereas a more orange/red-hued yolk indicates an animal which has fed on a lot of proteins (insects, worms, vermin, high-protein vegetable fodder, etc) and a deep yellow is a balance between the two. Thus it makes sense for a duck yolk to be more pale, especially if it was farm-raised on grain feed... and a penguin yolk to be a deep reddish orange due to a protein-only diet. I raised chickens and did this as a 4-H experiment many many years ago and even among birds of the same type, a drastic difference can be seen in the yolks of those fed only grain, a mix of grain and protein, and a more protein-rich diet. I also noticed the paler the yolk is, the less flavorful and "yolky" it tends to taste. Darker yolks are definitely the best!! Hope that helps!

      I can confirm this. I feed my flock a grain mix in the winter since they're mostly not laying and the grain has a higher calorie content for the amount they get, then in the warmer months they get a high-protein layer feed. They're also able to forage on an acre or so of good pasture with a bit of woodland in the back corner, but obviously there's a lot less good forage in the winter. The few hens I have that lay in the cooler months while they're getting mostly grain lay very pale yolks, but those exact same hens produce lovely deep yellow-orange yolks when the summer months roll around. The shell color is genetic (most of my hens are mixed-breed easter eggers and lay pale green shells), but the yolk flavor and color is almost entirely based on their diet.

    Omg! thank you Emmy I have a little mason jar like that and I will totally try that, was boiling my eggs wirh baking soda and helps the shell to peal off easy but only if eggs are fresh.

      If you put them in the jar or a glass and shake it will loses all the shell and break it up and it comes off soooo easy!

    I peel my eggs by cracking the bottom fatter part of the egg lightly before I boil them and then it lets water get through so it's easier to peel when it's done boiling.

      Margaret Gardner Not if you do it gently. You only want to crack where that little air bubble in the egg is between the shell and membrane.

      For me I follow Emmys way. She says to bring the eggs to room temp. Either by letting them sit out or place them in a bowl of warm water for a few min. Bring some water to a boil. Gently place the eggs in the boiling water and boil for 8 min. While they are boiling get an ice water bath ready to place the eggs in to shock them. This helps release the membrane from the egg and they peel beautifully 😀

      Erika Mononoke in Germany we have egg pickers. (Idk how to call them) it's basically a needle with wich you punch holes in the bottom part of the egg where that air bubble is. And then after boiling we rinse the egg under cold water.
      I always thought the holes where so that the egg does not crack while cooking and the cold water to make peeling easier ...
      I think that you cracking the bottom slightly is the same as us punching holes just a different technique :) interesting!

    Sardine oil on egg isn't as weird as it might first sound. Lot of tuna/sardine salad recipes use some chopped egg. Sardine salad spread on crackers is one of my favorites, btw.

      rinofthemill Penguins haven’t been domesticated, meaning they only leave eggs after finding a mate, Meaning, if you eat a penguin egg, your killing a little baby penguin before it had the chance to be born.

    What if you were to allow the bottom to set a while, then once you have that you place the yoke atop and pour more agar agar over that in order for the yoke to remain suspended

      Sometimes if the first pour has cooled too much, it will not BOND with the next layer... So it can potentially look like separate pieces thus ruining the illusions you were going for initially.

      yup, you will see a clear division between the 2. I would think a process of letting the gel set a little, then flipping the device over(have to stop it from leaking out) and continuing a rotation process during the cooling phase in order to have the yolk suspended. Maybe more work than it is worth?

    Wonder if you could use the jello egg molds they have to make these. It is getting to be Easter time so you're more likely to find them. It would definitely make these more egglike.

      It does though. Penguins lay just one egg and they are VERY protective of it, they take turns heating it, and generally have a bigger motherly instincts than most birds. Baby penguins also rarely survive. Plus they rarely ever lay legs that don't end up being fertilized, while chickens will lay eggs no matter what, even when there's no male to fertilize them with. So it's way less ethical to eat a penguin's egg than it is a chicken's egg. Penguins also pretty much can decide to commit suicide if their baby dies or if their egg cracks/gets stolen. Remember that unlike most birds they live in families, they mate for life and don't "kick out" their family members.

      Viktor Chmiel They’re both just animals. Yes a chicken has such a different way of life than a penguin, I mean monkeys live differently than whales right??? it is not any more special than a chicken egg. That’s just like how people freak out when cats and dogs are being eaten. What about the cows, pigs, chickens, goats..etc? What makes dogs more special, their cuteness? Some people only know dog meat, it’s a part of people’s cultures just like the way people eat cow or pork or chicken. Don’t mean to sound so harsh. Just think about it

      анонимный I hope you realize that there are certain dogs used for meat consumption. But No duh a cow has more meat, it’s over 10 times the size of a dog! That argument is invalid. Fish have less meat than dogs??? Oh I guess eating fish Is stupid too!

    It's funny that you told us all about penguin eggs because I've been wondering for a few weeks now if it would be possible - with the current craze for transparent food - if such a thing as a see-through fried egg would be possible.     Maybe if you try this again, you could try goose eggs - they have a darker yolk than duck eggs, and might be the size you'd want.

    If you have farm fresh or your own chickens, they will *not* peel like that unless you let them get as old as store-bought eggs (so old!). Duck eggs are likely much fresher because the market is locally raised, and they just never peel as well.

      It could also have to do with the processing they go through. In the US, the eggs are actually bleached to remove all the gross stuff from us cramming out chickens together. This is also why we have to refrigerate them, while in other countries they can leave them out on the counter

      We also have to refrigerate ours because we don't vaccinate our birds for salmonella en masse, unlike countries like the UK. Emmy's in the US, so her eggs are washed if they came from a retail source at all (including farmstands). As the egg ages, the membrane loses water and pulls away from the shell.

      No that's incorrect... They key to peeling fresh eggs Is to boil eggs with salt, then dink them immediately into cold ice water, then rap the egg all around on the counter peel and break off the fat shell part of the egg then you Can easily peel them. I have 30 chickens and make lots of deviled eggs.

    Ms. Emmy, I want to thank you so much for introducing me to agar-agar. I have had to swear off all gelatin products due to my pork allergy to both the meat and to lard. You have provided me with a plant based alternative that I never knew about, so now I have a way to cook or make gelatin pudding pies, and other delectable desserts that I can eat without feeling so bad.     now.. you got me worried.... the agar agar that I bought from Living Jin is from Korea I think... I wanted to try the clear pumpkin pie that I seen on another channel....     A half-gallon pickle jar is the traditional farm method to instantly peel a dozen hardboiled eggs....
    The duck eggs are so pale because they're being fed corn and wheat. Find a better supplier.

    If you want eggs that are super easy to peel you should try steaming them. Steam for 10 minutes and shock in an ice bath until cool. The shell pretty much falls off when you roll it to crack the shell. The yolks are also bright yellow.
