    In this video, I show you how to make Irish stew. This vegetable stew recipe is hearty, satisfying, rich, and perfect for St. Patrick's Day recipes. Traditional Irish stew is made with beef and Guinness beer. Obviously beef isn't vegan, so I skip that and replace it with hearty vegetables. And beer isn't (believe it or not) isn't always vegan either as they sometimes use isinglass (fish blatters...ew) to filter the beer. Guinness is currently in the process of changing their recipe to be vegan. I know it is vegan in some areas but not yet everywhere. In my vegan stew recipe, I used a local beer which is vegan-friendly.

    Hi Sam. I just made this tonight and it was beyond amazing. Even my carnivore hubby was amazed. I did add some homemade dumplings to it and that took it over the edge :-).       FYI: Near the beginning you said that you used three smaller baby parsnips instead of two large ones like you had recommended in your recipe…
      I thought you would be interested to learn this which I just read on the internet regarding parsnips in general (I’ve never had them before in my life, so I wanted to read up a little bit about them):
      “First things first: Look for straight, small parsnips. This may seem counterintuitive, but large parsnips typically have a thicker, woodier core that’s less tasty and more difficult to chew and cook with.”
      “To prepare a parsnip, avoid peeling it the way you would a carrot-you might accidentally strip away some of the best flavor. Instead, grab a vegetable brush and scrub, scrub, scrub.”

      Also! I just read on the internet that you were incorrect regarding Guinness… as of January 23, 2018, when the article was written that I read online - Janice announced that vegans could be sure that ALL Guinness around the world is now vegan and there isn’t any worries anymore on that front (whether you buy it from the keg, or in cans, whatever - it’s all vegan). That article came out in January of the same year (2018) that you made this video (your video is in March), so you were just a little bit behind the news is all.

    Watching this I realized that I have made lots & lots of soups since going vegan but surprisingly no stews!? This one looks perfect for this weather too...looks like I found my 1st stew! 🙆

    There's traditionally no stout in Irish stew, that's a recent addition - it used to be distinct from other stews due to the potatoes, back in the day when the English believed potatoes caused leprosy and therefore it was the only staple food available to the impoverished Irish

    Sam, this stew is absolutely amazing in its simplicity. The depth of flavor is amazing, and the mouth-feel of the gravy is just perfect. I doubled the recipe and added about a tbsp of tamari sauce and 2 tsp of Kitchen Bouquet for a touch more umami. Delicious! I just recently discovered your channel and website. I have already purchased your cookbook and have downloaded and made several of your dishes. Please keep the recipes coming!

    This was really good! I did have to let the stew simmer for a while longer and add more sugar to reduce the bitterness but the end result was fire!

    in most cultures the traditional recipes do not include spirits or beers until times the culture is thriving enough to get all that stuff going. So irish stew, particularly very traditional Irish stew, really isn't characterized by stout beer, but rather actually usually very simple ingredients. Stout beer is a whole U.K. thing where Porters got popular and the strong ones were deemed "stout" porters, so the strong, "stout", roasty ones... just read about that. I also read up earlier on another study that the Czar of Russia traveled to England at one point and that that is how the Imperial Porter and/or Stout (Porter) that is prepared the Russian way came to become popular in Russia because he enjoyed drinking it so much that he brought some to his wife I think and then to the Russian navy. Pretty interesting stuff if you ask me. I don't mean to correct you I love your recipe. One time I told someone real loud & proud that "traditional stroganoff dishes have white wine" in them while someone tried to argue that a white sauce based sauce, the one used for stroganoff would pair better with red wine and totally while I walked away it got to me that I had been wrong to say.
    Humans are so interesting trial and error always.
    & that's exactly how stout beer was invented, brewers made more and more porters until they got to think about brewing them and roasting ingredients at different strengths and now vegan Irish stew recipes can have their delicious cooked savory porter ale broth flavor!

    Basically Guinness beef stew without the beef. I bake it in the oven uncovered for 3 hours. The longer it bakes, the better it tastes.

    I don't get the olive oil comment! Yes traditionally Irish would use lard or goose/duck fat but Hey, Vegan! There are so many flavours in this that by the time it's stewed for a while you can't taste it anyway.

    Omg I'm so excited about the recipe!! One of my favorite things to do every year was go to the Irish Festival and get the Irish stew in a bread bowl! It was soooo delicious! Of course, that was before I went vegan. Now I can't wait to try this and put it in a bread bowl! Thank you

    I made this stew and the bitterness of the Guinness was a little too much for me, even after simmering for almost 45mins. So I added some stock and beefless mince to soak and dilute it up a bit. I will definitely be trying this again with half of the Guiness maybe, as it was delicious with the alterations! Thanks so much for this recipe 😊

      Interesting. We changed the recipe quite a bit, no stout at all, just 4 cups of strong vegan beef stock. No need for sugar then either.
      Also added a handful of diced swede, and a half cup of baby peas stirred in at the end. Ah, we changed the tomato paste to 1/2 cup of passata as well.
      This modified recipe now gets eaten once a week in our house 😁

    I'm irish. The stew looks perfect but I never use beer, flour, brown sugar, tomato paste or mushrooms in stew. Not sure about thyme or bay leaf but pepper yes. Also we let it simmer for a long time. 15 minutes is very short so the vegetables don't have much time to add flavour to the broth. Worchester sauce goes well with it for dressing. A few extra potatoes on the side help fill you up. Its a simple dish

    This looks a bit like one of my vegan recipes I use sometimes. It’s a vegan version of Russian chicken stew. In my vegan version I use mushrooms instead of chicken. I like the meaty mushrooms like shiitake, Portobello, and sometimes if I can find them, fresh chanterelles. I also use some dry porcini mushrooms for this dish. For my dish I use vegan products, and I try my best to make sure all of the ingredients are organic non GMO, even the herbs & seasonings. It includes fresh carrots, onion, celery, good amount of potatoes, fresh garlic, veggie broth, fresh tomatoes/or canned, fresh parsley and cilantro, 1/4 cup of of frozen peas, 2 tablespoons of tomato paste, and 1 of the vegan non-chicken bouillon cubes, or more if you wish. I sauté the mushrooms & onions with 2 or 3 tablespoons of vegan butter for a while until mushrooms appear fried or caramelized and meaty. Cook mushrooms first for few minutes before adding the onions, because mushrooms take longer to cook. Then add all of the tomatoes & rest of the veggies & garlic, and cook for few minutes. Than add veggie broth. I take some of the veggie broth in a separate cup, to dry bay leaves, seasonings to your taste, and add the bullion cube, and 2 tablespoons of tomato paste and microwave it for one minute, then take it out of microwave, and mix it really well and pour it into the stew. You can add salt to your taste, but be careful because the bullion cube and the veggie broth may already be salty. I usually add a good amount of onion powder, and garlic powder, and other seasonings. Depends on what I have in my pantry at the time. I may add just a tiny bit of rosemary, and definitely add two bay leaves. Keep it on low heat for about an hour or maybe even hour and 30 minutes. You don’t need to add any cornstarch or anything for thickening, because the tomato paste and the potatoes will do this job. Forgot to mention to add half of the fresh parsley and cilantro while it’s stewing, and then add the other half of fresh herbs when the stew is finished and removed from heat.

    This is a great recipe. One thing that I don't like in vegan cuisine is the lack of being able to use meat for flavor. This stew has tons of flavor. And I add 1 cup of cooked split peas or lentils near the end for some extra protein :)

    This is so good!! I have made it in the past and knowing St. Patty's Day was a few days away, I hoped you would do this as a video! Will making this for our holiday celebration. It really does taste like my mom's beef stew with gravy! I must confess, I do add your tofu crumbles to this recipe and they make it seem even meatier.

    So I had to substitute a lot of ingredients cuz I didn’t have them, but I still wanted to make a nice stew. So I followed the general proportions, swapped out some stuff with more Asian ingredients I had, used the same techniques, and it smells and tastes soo good!! I love how easy it is to follow your recipes and how flexible they are! Even though it wasn’t exactly the same (taste wise), a lot of the things in the video are pretty versatile and so helpful for teaching me how to cook! Love your vids so much!!

    Sam, I made this a while ago and it was so yummy! One thing I would say is I will boil the beer a little first before adding to the stew as it was really strong. But! Super yummy and easy thank you so much for this!

    A sorrel garnish would be so fantastic for this I feel like maybe. I ate a four leaf clover when I was a kid and then later in life ate sorrel and the taste is near identical so I guess it would be just to reminisce that feeling. I wonder if anybody eats good clovers though or if there is any reason not to in large quantities because that would obviously be even better! & that sure would make it look Irish!

    That stew looks legit and so simple. The only thing different is I'd add soy curls to get that meaty texture. Gonna try it as soon as I find some stout beer.

    I just cooked it but didn't have any mushrooms and I was way too lady for going to the store for some, but instead I used impossible ground meat and holy gee! It was amazing. Gotta use mushrooms with it next time. Thanks for your recipes... not only gorgeous but soooo funny!

    A friend made this for me at a dinner party over Christmas and it was suuuper sweet! I’m wondering if she added two tablespoons of sugar instead of two teaspoons. Lol Definitely going to try it again!

    i like the way you count the tbsp of olive oil. i'm italian so we dont usually use recipes. just eyeball it or go by taste/smell lol.

    FYI: Near the beginning you said that you used three smaller baby parsnips instead of two large ones like you had recommended in your recipe…
    I thought you would be interested to learn this which I just read on the internet regarding parsnips in general (I’ve never had them before in my life, so I wanted to read up a little bit about them):
    “First things first: Look for straight, small parsnips. This may seem counterintuitive, but large parsnips typically have a thicker, woodier core that’s less tasty and more difficult to chew and cook with.”
    “To prepare a parsnip, avoid peeling it the way you would a carrot-you might accidentally strip away some of the best flavor. Instead, grab a vegetable brush and scrub, scrub, scrub.”

    The background noise...music? had me closing all my apps thinking l had something running on another page..l missed the recipe and had to watch again...also..Olive oil? never for cooking! water fry the onions and you will have more color All that aside it looks delicious! . Happy Paddys Day!

      I'm not oil-free so I don't mind cooking with oil, but of course, if you know how to do a water or broth sauté, go for it! I hope you enjoy the stew!

      Not against your use of oil but Olive oil should be used as a dressing and not for cooking, a Flax or Grapeseed oil would be better.

    I’m preparing this for me and my wife for st.patricks day. The veggies seem to take a long time until it becomes tender, I’m simmering it for 1 hour now and it’s still not done. Hope it comes out alright

      An hour! It definitely shouldn't take that long. With a simmer, you should see light bubbling- just want to check that you are cooking it hot enough. Veggies don't take that long to be fork tender. I hope it turned out for you!

      @@ItdoesnttastelikechickenFinished cooking at midnight uk time in slow cooker,waited until midnight to eat(to bowls/crusty bread)manage to freeze two tubs just eaten one for tea.
      Ale,honey,puree,bay leaf,thyme makes this stew a satisfing and sweet.

    This looks so good!!! Unfortunately, the suggested flour substitution for gluten free wouldn't help much since the beer isn't gluten free! :( I wonder if there IS a gluten free vegan stout out there...

      There are definitely gluten-free stouts out there! Kennet & Avon Savernake gluten free stout is both gluten-free and vegan :)
