I've just come up with this way of securing threads myself a few weeks back as I also felt they end up sooner or later coming loose. Glad I am doing it right!
You could certainly do that - it just requires that you definitely have some real experience/skill working with swim fabric to get a nice finish because it's difficult to get that nice tight binding over the elastic while trying to get that fold to lay nicely. With a woven fabric it would be easy, but swim fabric definitely ups the difficulty level! But for someone with experience working with swim fabrics it's definitely an option! :)

Nope! For this type of stretch fabric, the greatest stretch is on the crossgrain, so that is the direction I cut the binding in.

I cut mine across the grain, so that the direction of greatest stretch runs lengthwise down the binding.
