Oh yes! lol that's my Italian sister. Funny Italian cooking is very close to southern cooking because both eat from the garden with fresh veggies and parts from the animal that most people don't use.
Very cool! I use the same technique for filleting chicken breast, except I start at the big end at an angle following the natural shape of the breast. My wife eats a late lunch/dinner at her job, and I cook proteins for her to, and chicken breasts are one of the proteins. When it's grilling season, I brine the cutlets with water, sugar and salt, and grill. In the winter, I cook them the way you did in a pan. I also will flour (seasoned) the fillets, brown in a skillet with olive oil, remove from the pan, add a little more oil, if needed, add the seasoned flour to make a roux, and chicken broth to make a sauce. Place the chicken and serve on noodles.
That looks so good, simple yet very pleasing to the eyes, Wish I could be there at your table feasting. I'm going to try to emulate the dish but I'll add a little tomato paste and sugar to balance the tomato paste.
