Made this yesterday and my picky eater licked the plate clean! Simple and easy to make means more time in the garden for me. Win-win all the way around. Thank you, Caleb.
what a great easy recipe - and could easily be done as a vegetarian meal as well - just sub brocolli, mushrooms, carrots, peas, whatever - and veggie stock. Either way, absolutely delicious !!!! thanks, as always, for sharing this with us !!!! winner, winner, chicken dinner 😁🐓
My partner and I make lots of different casseroles. We always make 2 or 3 extra, that way we can put leftovers in the deep freezer for easy meals after working a long day
Me and my husband both give this recipe 5 thumbs up! 👍👍👍👍👍 We switched out the green for the yellow zucchini (what we had growing) and the sour cream for Greek yogurt. The only other thing I added at the end was some dill fronds which complimented the lemon and creamy flavours of the marinade. This is a keeper for sure!
I just made this for dinner tonight and it’s so good! Very flavorful. The only change I made was using dried Italian seasoning instead of Thyme because that’s what I had on hand. Thanks for the great recipe!
Thank you for sharing these delicious recipes with us. I made your Zucchini Fritters last week (a hit!), and the leftovers were used the next day for breakfast, topped with poached eggs and grated cheese. I’m going to try this casserole tonight; however, I’ll omit the thyme and substitute spices (cumin, Chile powder, etc) and Colby cheese to give it a bit of a Mexican flavor, with sliced avocado on the side. Maybe I’ll include some tortillas, in case anyone wants to create their own burrito.
Looks delightful. Thank you. I've scratched the enamel on my Le Creuset skillet with metal so now I use a high quality utensil (no teflon) or wood spoons.
I made this recipe for supper tonight and it was absolutely delicious! Just like you said, it has several different flavors. The problem was that I used brown rice since that is what we usually have. My wife told me it was a mistake; brown rice needs to be cooked first. She was right. The rice stayed on the crunchy side even though I cooked the casserole an additional 35 to 40 minutes. Live and learn. I plan on making this again in the near future using the correct rice. I know it will be a hit with anyone that tries it.
Good to know I was thinking about using brown rice too maybe I'll try quinoa but wasn't sure about that either if the liquid might need to be adjusted for that. Thanks for the brown rice heads up. 😂
Looks really good, you can also change it up by replacing one of the zucchini with a yellow squash, replace the cheese with 2tbl curry powder and have a wonderful curry dish 😊
This was amazing! All the flavor you added was just perfect and the brine was so fresh. I used chicken thighs with the skin on and fried those and then followed the recipe and baked about 45 minutes. Hubby loved it and I will definitely make this again! Thanks so much and I love your channel.
Man, this looks good! I think I might add in some red bell pepper, mushrooms and green peas. And maybe a hint of curry powder? A great flexible recipe.
My partner and I make lots of different casseroles. We always make 2 or 3 extra, that way we can put leftovers in the deep freezer for easy meals after working a long day. I would like to try this one!
Made this earlier today and it was absolutely delicious. However, despite following the recipe exactly my jasmine rice was still crunchy at the end of recommended cooking time. I ended up having to add way more liquid and almost triple the cooking time. That being said, I would definitely make this again.
Hello from Gensac, France. Thanks for not using canned soups as I cannot get them here. But I also don’t have sour cream. Do you recommend using Greek yogurt or crème fraîche? Cannot wait to make this as courgettes are in season here too!
I'm Hungarian so I like casserole type of dishes. Chicken paprikash. Stuffed cabbage. Etc. Hi Germans just don't know about cheese. Cheese is not in Hungarian cooking.
This looks delicious, I'm heading to your website. My husband is allergic to lemons, and I find it tough to know how replace that. A little bit of balsamic?
Will you please share a link to the casserole/skillet that you are using in your video that goes in the oven. I would really appreciate it! This would be a great dish for a family Sunday dinner
It looks like it’s a Le Creuset Enameled Cast Iron Braiser. You can get them at Williams Sonoma. They come in 3 different sizes and many different colors.
Hey Kaleb. I just put this in the oven and will let you know how it went. Please note that your written/Printable recipe does not include adding the chicken back in. I had to read it several times. Just an FYI.
Never mind! Sorry! I just went to your actual recipe and saw that it says uncooked. Which is what I assumed, but didn't want to make it wrong. Thanks!!! Love your recipes!

Man, this looks good! I think I might add in some red bell pepper, mushrooms and green peas. And maybe a hint of curry powder? A great flexible recipe.
this is definitely reading coconut cream curry. I'm glad I'm not the only one with that thought. almost like a risotto dish. casserole seems wrong.
My partner and I make lots of different casseroles. We always make 2 or 3 extra, that way we can put leftovers in the deep freezer for easy meals after working a long day. I would like to try this one!

Awesomely delicious! Thankyou❤😂 will try it!
I'm a Minnesotan...I think you made a "hot dish"! 😃
Hello from Gensac, France. Thanks for not using canned soups as I cannot get them here. But I also don’t have sour cream. Do you recommend using Greek yogurt or crème fraîche? Cannot wait to make this as courgettes are in season here too!
You could probably use either. I always use what I have ... yogurt, sour cream, buttermilk for some things or your creme fraiche.
I'm Hungarian so I like casserole type of dishes. Chicken paprikash. Stuffed cabbage. Etc. Hi Germans just don't know about cheese. Cheese is not in Hungarian cooking.
The best meal I ever made was Chicken Paprikash. I just followed a recipe from a cookbook.
Can you share what stove to oven pan you used? Like the brand? I LOVE all the pots and pans you use, I desperately need to update my pans!
This looks amazing👏👏 I bet it tastes good too!
Wish I could have some 😋
This looks delicious, I'm heading to your website. My husband is allergic to lemons, and I find it tough to know how replace that. A little bit of balsamic?
My muscle memory can smell it 😋
Looks easy any tasty, I will probably add some onion
❤

Yes it is. I have it and purely love it!
Thank you @maryswansen8113!
Hey Kaleb. I just put this in the oven and will let you know how it went. Please note that your written/Printable recipe does not include adding the chicken back in. I had to read it several times. Just an FYI.
Great with bow tie pasta instead of rice.
Nifty bench scoop, Kaleb. This looks tasty. 😉
Where may I purchase a cutting board like yours?
What kind of pan are you using?
You're very slender but for the rest of us I think U could sub the rice for quinoa and make it healthy.
What are the measurements for the chicken zucchini rice casserole?
Kaleb, how can I do this without the dairy? I’d really like to try it.
Wait! You begin by saying you’re going to brine the chicken then out of no where you’re making a marinade! Which is it???
was your rice precooked?
Never mind! Sorry! I just went to your actual recipe and saw that it says uncooked. Which is what I assumed, but didn't want to make it wrong. Thanks!!! Love your recipes!
I dislike zucchini. What could I substitute?
I have so enjoyed your other recipes and I have to say this did NOT turn out well. There was not enough liquid to cook the rice. ( I used Jasmine)
I'm having a similar issue. Just cooked covered at 350 for 20 min and rice is not cooked. Hmmm
Anyone else
Find chicken to be Like rubber when chewed?
I like to toast a chicken and the meat is much more tender. I intend to make this casserole without the chicken
Gotta beat it before you cook it sliced thin. Dont overcook. Or better yet,buy a rotisserie from the market! Ha ha
Nifty bench scoop, Kaleb. This looks tasty. 😉
You could try dark meat
🥰
I love that you don’t use canned soups. They are so yucky
