In our Mexican kitchen, we would call those wet burritos. Traditionally, we use corn tortillas for enchiladas. To prevent breakage, toast the tortillas quickly in oil before filling and rolling. The sauce you made looks delicious.

Having lived in the southwest (New Mexico and Arizona) since I was 11 and now I'm 45, I was wondering what was a Midwestern boy's take on enchiladas. And all I can say is yep, those are Midwestern enchiladas.
@@marlenejones6266I have family in Texas, he is spot on. We make the traditional Mexican enchiladas. You can go to any small town in Mexico and find the same thing as we make in California.

Looks delicious and serve tomatoes and avocados with it. Mayo added to avocado makes yummy guacamole creamy and tasty !

Yes you can freeze these. I wrap them individually after they have cooled.

I was just going to post the same...I'm a nurse as well and I'd rather eat foods from home. Looks delicious and very easy to make.
Instead of flour could use corn starch. Try using GF flour sometimes. For the people that who can't have gulten.

Try using the product Egg Life. I made enchiladas with this product and they turned out great!
Look good until you put black beans. I live in Texas & we cook the corn tortillas when making enchiladas

I'm not sure there is a good substitute. Do you not like tomato paste? I guess you could just tomato sauce.
