Never sear with a prob still in the meat. Not rated for that high of a temp. Cut against the grain on the tri tip.

Why didn’t you use the automatic coal ignition?

Honestly I never have. I own 4 Weber’s with the auto light and I’ve never hooked up a propane canister to any of them. I am used to just using a chimney and a lighter cube. I should give it a try one of these days :)
