    Thanks so much! My Mom passed away 11 years ago my son’s wanted her Marshmallow frosting for Easter. I couldn’t remember all the steps!!

    Hi Sam I have a questions. Once I torch the marshmallow fluff how long does it keep? And can I store it in the fridge?

    I use superfine sugar instead of regular granulated so I don’t have to worry about any ‘grittiness.’ You can find it in some areas of the US, from the Domino Company.

      Good tip. Adding sugar to a food processor will make superfine sugar, is that correct?

    Is the frosting 'sticky' like a marshmallow? When I was a VERY young girl (decades ago), I went to a birthday party that had Angel Food Cake with white, sticky icing. It was SO good and I've never forgotten it. Every year after that for my own birthday, I asked my Mom for Angel Food Cake with sticky frosting, but she was never able to accomplish it. I've tried over the years to find a recipe for it, but have been unsuccessful, as well. This looks like it might be it???

      I did that same thing when I was little. Birthday request was funfetti angel food cake with marshmallow frosting. So sweet and so delicious.

    Fantastic Recipe and Process demonstration. I just can never get the mix to 180 Degrees, 142 has been the Highest. I may be whipping it too fast and it is becoming to full / fluffy while cooking.

      I haven't actually personally tried freezing this frosting. I think it could work, but you may need to re-whip it after thawing.

    Can we use pasteurized egg whites and omit the cooking process?

      Since you still need to dissolve the sugar I wouldn’t recommend it. Another issue that you may run into is that pasteurized egg whites do not always whip properly as they need to do for this recipe

      Could be tricky, I'd be worried about the frosting breaking, might just be best to top with raspberries 🤔

      It will crisp a little bit on the outside, but it won't become hard all the way through. :)

      If you aren't using it within, I would say 24 hours, you'll want to refrigerate it. It will stay in the refrigerator for about a week. :)

      If consuming within 2 days you don’t need to refrigerate it. Any longer than that and you’ll want to refrigerate. It should be good up to a week so you can make it a little in advance if need be. Anything exposed to air will harden a bit much like any frosting so you’ll want to be sure to press some cling wrap directly against the surface to prevent that.
