Another great job, Sam! You are so wonderful at showing everything, step-by-step. I always know that I am going to learn something, whatever skill level, from your videos, Thanks so much for the time and effort you put forth...just for us.
It looks so delicious. I think I'll use it on my chocolate cupcakes. It looks like it will make a great addition. Thank you for sharing and keep on caking 💜
Me Encantan las cosas que haces y también la forma que explica, yo no sé escribir en inglés pero entiendo bastante por eso me gusta ver sus vídeos, pronto voy a hacer Marshmello cupcakes gracias 1000
I use superfine sugar instead of regular granulated so I don’t have to worry about any ‘grittiness.’ You can find it in some areas of the US, from the Domino Company.
Is the frosting 'sticky' like a marshmallow? When I was a VERY young girl (decades ago), I went to a birthday party that had Angel Food Cake with white, sticky icing. It was SO good and I've never forgotten it. Every year after that for my own birthday, I asked my Mom for Angel Food Cake with sticky frosting, but she was never able to accomplish it. I've tried over the years to find a recipe for it, but have been unsuccessful, as well. This looks like it might be it???
Fantastic Recipe and Process demonstration. I just can never get the mix to 180 Degrees, 142 has been the Highest. I may be whipping it too fast and it is becoming to full / fluffy while cooking.
Since you still need to dissolve the sugar I wouldn’t recommend it. Another issue that you may run into is that pasteurized egg whites do not always whip properly as they need to do for this recipe
If consuming within 2 days you don’t need to refrigerate it. Any longer than that and you’ll want to refrigerate. It should be good up to a week so you can make it a little in advance if need be. Anything exposed to air will harden a bit much like any frosting so you’ll want to be sure to press some cling wrap directly against the surface to prevent that.

Hi Sam I have a questions. Once I torch the marshmallow fluff how long does it keep? And can I store it in the fridge?
I use superfine sugar instead of regular granulated so I don’t have to worry about any ‘grittiness.’ You can find it in some areas of the US, from the Domino Company.
Good tip. Adding sugar to a food processor will make superfine sugar, is that correct?
Thumbs up. Looks 😋 and yummy.🐇🐇
Thank you 😋
Hi. Wondering if i can pipe these out a day before and they will be fine the next day? The marshmellow wont shrink/loose their volume over time?
Ooooh.... 🤤
Way better than using gelatin!
Sooo tasty!

I did that same thing when I was little. Birthday request was funfetti angel food cake with marshmallow frosting. So sweet and so delicious.
Probably 7 minute frosting
Maybe it's just Italian meringue that you are looking for?
Wonderfull cupcakes
Enjoy 🥰
Yummy thanks for sharing. How do we make it chocolate favored? 🤤🤤
You make it super easy.

We can keep it in fridge?
Me too do
delicious good video.
Thank you 😊
Hi without adding corn syrup will i get this texture or can u suggest alternative ❤
Use the filling from my oatmeal cream pies instead, same idea but no corn syrup: m.ruclips.net/video/JAgmThbavQY/видео.html
Can you add food colouring to this?
Is there a difference between this and 7 minute frosting?
is this stable enough than buttercream in summersm?
❤
The blue mixer is still neglected!!🤣
🙃🙃
Can you freeze the frosting for later use?
Can I replace corn syrup with glucose?
What is the best substitute for Light Corn Syrup? I only have high fructose corn syrup ang Glucose syrup
Glucose syrup should work 😊
Can i make this in advance and just freeze it?
I haven't actually personally tried freezing this frosting. I think it could work, but you may need to re-whip it after thawing.
Can we use pasteurized egg whites and omit the cooking process?
Since you still need to dissolve the sugar I wouldn’t recommend it. Another issue that you may run into is that pasteurized egg whites do not always whip properly as they need to do for this recipe
Can I make the lemon blueberry cake a day ahead
Sure thing!
Any way to add raspberries to this??
Could be tricky, I'd be worried about the frosting breaking, might just be best to top with raspberries 🤔
And does it gets hard after few hours on cake or cupcakes?
It will crisp a little bit on the outside, but it won't become hard all the way through. :)
Thank you i made it for my chocolate pie and it came out perfectly
Hey can you use a hand mixer as well?
You can, it will just be a bit more of an arm workout. :)
Ok thank you sooo much dont have a stand mixer but I guess anything is possible Christmas is coming lol
Can recipe be doubled?
Sure thing! :)
Are you married? because your beauty and baking skills are the bees knees
How long will this keep? How best to store?
If you aren't using it within, I would say 24 hours, you'll want to refrigerate it. It will stay in the refrigerator for about a week. :)
How long will it last in fridge? Can I make it ahead?
If consuming within 2 days you don’t need to refrigerate it. Any longer than that and you’ll want to refrigerate. It should be good up to a week so you can make it a little in advance if need be. Anything exposed to air will harden a bit much like any frosting so you’ll want to be sure to press some cling wrap directly against the surface to prevent that.
I’m curious how this is different from Swiss meringue?
SMBC doesn't have corn syrup and adds butter after the whipped egg white have cooled
Is this the same as 7-minute frosting?
7-minute frosting doesn't have corn syrup
Can you cover a cake with this?
Yep! 🙂
@@SugarSpunRun thank you so much for responding! ❤️
@@SugarSpunRun how long can be stable?????please
Is,this stable in hot weather?
Like most frostings, it will start to melt in really warm temperatures. :(
@@SugarSpunRunthank you
Did you just roast it
That’s Italian meringue
