😀 In South Africa our version uses a similar technique except that it requires cake wheat flour, sugar, baking powder and a pinch of salt. We then cut a generous amount of butter into the dry ingredients and full cream amasi ( a type of cultured milk) to tie the dough together.
Very cold cream & very cold lemonade will help CO2 gas stay in mix till baking takes place. Works very much like yeast free "soda" bread style reciepe except idea of minimum mixing means limited gluten is developed. It may be possible to swap lemonade to cold beer or soda water. Good baking.
Is this why guys sound like they are mansplaining? No words to credit the originator, just generalised knowledge added to the mix, and own thoughts on the subject. *facepalm*

The secret to tall scones is not to roll to thin, I make mine about 3/4 inch high, and you must use self raising flour, the cream makes up for the lack of butter the lemonade gives extra lift, I have a sweet tooth so add a little extra sugar, when making use of the scraps fold over mixture and roll gently ( or pat) gently. I sometimes place my mixture strait on a baking tray and use a very large knife to cut into segments make sure to dry and flour knife after each cut, gently prise apart. Also you can sprinkle with a little sugar if you are going to add a small amount of sultanas and are not going to have cream. One last thing definitely do not let milt run down sides when brushing them it will make them lop sided oh! And just push strait down N O wiggling when using a cutter, I brush mine with a little egg and milk mix sometimes, I hope your daughter does champion well with all this advise, my love to you both❤
I tried this recipe today. The result was beautifully light scones but I found that 10 minutes with my Miele oven was not enough to get a golden colour. Will definitely try again 😊! Thank you Muriel for the lovely demonstration.

Why didn’t you post the recipe she gave on the video? She clearly says 5 flat cups of flour. Your recipe will only make about 16 scones - not the 24 she cut (4 rows, each cut into 6 pieces) and it looks like she used a pint of cream and 300ml bottle of Schweppes. This makes sense for 5 cups of flour. You left out the salt altogether. And at 220C (425F) - not 210C - I’m pretty sure scones that thick will take 20 minutes to bake - 10 then turn and 10 more. It’s really disappointing to follow a link to the recipe and find something totally different than what you just watched.
One question.. How much baking powder should I use for 3 cups of regular flour ? And ,is it possible to use lemonade without carbonated water ? Just simply lemonade Thanks
