Winner , winner chili dinner! Looks wonderful-I never thought about putting carrot in but it would offset the acidity in the tomatoes. Try adding some cumin seed next time- really enhances the chili taste!
This chili will be better the next day because all that flavor and I will put it on some vegan nachos! Add some vegan shredded cheese and vegan sour cream!
It helps the flavors come out a bit more--called "blooming". It's a great way to add more depth to soups/sauces! I probably didn't do it as long as you should, but you want it to get darker in color.
