Many thanks for the recipe. I've recently gone plant-based for health reasons, and I used to compete in chili contests in OK and TX in my younger days. I'm still learning how to do without the meats I used to use, and my competition grade chili had no beans - so this is a whole new world! I just tried your recipe the last night for the first time, and other than a couple personal tweaks (i.e. I love to add chiptle's with adobo sauce for a smoky kick), this recipe really felt like chili to me. Chili is the one thing I've missed, and you really nailed it. The bulgur and the masa are pure brilliance

Made this tonight, and it’s excellent! I used a poblano instead of the green pepper as my husband hates green bell peppers, used portabellas as you mentioned in the recipe since I couldn’t find bulgur, and I ground some cornmeal a little finer in my food processor since I was unable to find masa. Definitely adding it to the rotation! Thank you!

I’ve just made this for the second time, this time using Textured Vegetable Protein for the “meaty” texture. It’s so delicious! Here’s the most impressive thing - it’s one of the only (non-baking/pastry) recipes I’ve ever followed that is perfectly seasoned as written. That’s AMAZING. I’m a confident cook, and I like things well seasoned, so I always add and fiddle until the flavor is where I want it... but, this, I didn’t have to at all. Well done, Chuck!
I made this last night and it is so flavorful and hearty..I put some daiya cheddar shreds in it along with some diced up avocados and hot sauce on top..so delicious..thank you!

I took inspiration from your garlic peeling. I didn't like using my hand to smash, ouch, so I repurposed my meat tenderizer mallet thing, and gave it a good whack. Worked beautifully. Thank you so much for teaching your technique.
Highly recommended! I made this tonight. My husband and SIL enjoyed it. Chili was spicy for me and I left out the Chipotle chili pepper. I didn't have fresh garlic, I used about a heaping tablespoon of jarred chopped garlic. My meat substitute was finely chopped fresh mushrooms. I had my chili over rice, hubby and SIL had theirs over cornbread. Thanks so much!
Tried and true. I did not notice the meat was missing from this dish and I did not use the bulgar for texture, it was perfect after adding the refried beans. So good!
I have made this recipe several times and it always tastes amazing! I had some extra 3 layer hummus with jalapeño and red pepper that I added and it was chefs kiss! 👩🍳
I made this tonight. Followed the recipe to the letter. I'm a beef in my chilli guy and for this being a a vegan hippie dish, this is a 8/10 for sure (I was very surprised).. Plenty of texture, plenty of heft, plenty of flavor. You really won't even notice the bulgar in it, just a bit more texture but does nothing to the flavor. I did't use the jalepeno's but just a small squeeze of sriracha on my bowl cause my kid doens't like spicy. It was VERY good. My thoughts. First, you won't need the corn flour. It will be thick enough when you add the refried beans. I actually had to add about 3/4 cup more broth to thin it down a bit. Second, use ALL of the chilli powder. No joke. I don't know if it's the refried beans or what but this really needs that extra and doesn't heat it up. Third, top with some fresh chopped onion and a dollop of sour cream. I make a very good from scratch chilli and this one is actually contest worthy. Also note if you don't have the corn flour, you can take a handful of corn tortilla chips and spend a few minutes with a mortar and pestle and get the same effect. Just grind till it's a fine powerder. I used the ground tortilla chips as a topping with the onions and it was spot on. Great recipe, easy to make, and very tasty. Yeah food!! P.S. You could add a small can of green chillis to this, or even a half can of corn. Use your imagination. It will take all of what you want to give it. As a matter of fact, because you can add to it without taking anything away from the recipe, i'm chaning my rating to a 9/10. Your tummy will be happy.

Thank you for the awesome recipe! I didn't have any caned diced tomatoes so I used fresh ones out of the garden and sauteed them with my onions, peppers, and garlic. I used a whole can of refried beans. And I didn't have any of the fancy thicker you used, so I used the good old corn starch trick. I also used garbanzo beans instead of kidney beans. 😘 It was fabulous! Had it with vegan cornbread muffins. Thank you! 🖤

Made this for supper, thinking I would have leftovers for the week. I served it over baked potatoes and my carnivore boys ate it up. Nobody noticed there was no meat. Thanks, Chuck! This one was a hit in my house!
I make my chili pretty close to this, but I use 3 cans of beans (black, pinto, kidney) a can of roasted diced tomatoes, a can of tomato sauce, a couple tbs of tomato paste, and I use two kinds of Textured Vegetable Protein the tiny that's like ground beef and the small chunks that I cut in half this has the exact texture of ground beef, I also sometimes add minced cremini mushrooms either in addition too or replacement for the TVP, one small bell pepper, and several red Jalapenos, a handful of frozen corn lots of chili powder like yours, extra cumin, dried greek oregano, smoked paprika and some chipotle in adobo sauce. I use mushroom broth and a beer for liquid and masa to thicken.
Tried this 2 nights ago...REALLY excellent! I added smoked paprika and it helped even more...it came out nice and thick, probably due to the refried beans! So glad I tried it...I didn't use the bulgur but might try that next time! THANK YOU!

I didn't have masa but found out I could drop some corn tortillas in the blender and get a snappy substitute. Also, didn't have bulgur and was going to substitute couscous. Then I tasted it...OMG YUM! I left that out. I also added celery and mushrooms to my saute' veggies because they would otherwise waste in my fridge. It was a use it or lose it situation. I just made this but tweaked it with Quinoa instead of bulgar, Black Beans, Corn, and chickpeas. So good. 😍 Also I hope yall using fat free refried beans. Regular has lard in it.

I have it cooking now. I’ve never made a meal this complex. I bought a 4 quart Crock Pot just for this. I’m quite content with the chili powder quantity. I also put in a bunch of jalapeño slices and three habanero peppers for a little heat. Can’t wait for the hour to go by to try it. I did a quick taste test to get an idea. So far so good.
Idk if you ever tried adding quinoa and corn. But it makes it really good. I’m not even vegan. But my grandmother would make vegan chili for my dad who was vegan when I was younger. She had quinoa and corn in hers. It was delicious
I don't know if I can go without the beef, but I'll try this recipe. Whenever I go off the wagon from vegan meals it's with chili. I really love chili. OK will try it. You seem pretty confident and you have a lot of positive comments of people who tried it.
I went to a couple of stores and no one has bulgar...so you said other grains would work. I bought barley. Hope it works too. Might have to get that bulgar shipped from Amazon next time I make an order...until then will try barley.
OK I had to bail on the recipe because daughter said that barley will have the wrong texture. So I will order from amazon but but but, I found on your website you have a slow cooker chili that takes that bag of mixed beans, and I happen to have everything for that recipe, so I'll try that one first.

That's a great tip about grinding corn meal. I only see masa in 2kg bags, and I have no other use for it, so I'd rather not buy it.

I just made this but tweaked it with Quinoa instead of bulgar, Black Beans, Corn, and chickpeas. So good. 😍
Also I hope yall using fat free refried beans. Regular has lard in it.

Just made this today - AMAZING!! Can't Thank You enough for helping us all stay healthy with old favorites transformed. I think I might eat it again tomorrow with Lentil spaghetti or Rice noodles, definitely a one meal day. Whew it's so filling and delicious that it checks off a few of those "craving" boxes.
I have it cooking now. I’ve never made a meal this complex. I bought a 4 quart Crock Pot just for this. I’m quite content with the chili powder quantity. I also put in a bunch of jalapeño slices and three habanero peppers for a little heat.
Can’t wait for the hour to go by to try it. I did a quick taste test to get an idea. So far so good.
I also couldn’t find pinto beans so I doubled up the kidney beans. I get more protein than most non-vegan eaters. Love me some beans.

Idk if you ever tried adding quinoa and corn. But it makes it really good. I’m not even vegan. But my grandmother would make vegan chili for my dad who was vegan when I was younger. She had quinoa and corn in hers. It was delicious

I don't know if I can go without the beef, but I'll try this recipe. Whenever I go off the wagon from vegan meals it's with chili. I really love chili. OK will try it. You seem pretty confident and you have a lot of positive comments of people who tried it.
I went to a couple of stores and no one has bulgar...so you said other grains would work. I bought barley. Hope it works too. Might have to get that bulgar shipped from Amazon next time I make an order...until then will try barley.
OK I had to bail on the recipe because daughter said that barley will have the wrong texture. So I will order from amazon but but but, I found on your website you have a slow cooker chili that takes that bag of mixed beans, and I happen to have everything for that recipe, so I'll try that one first.
