Yousef Jan, thanks for sharing this wonderful recipe from my childhood. Growing up, my late grandmother and my dad would prepare this in the fall and winter and it's one of my favorites. I made this again last night and added a different twist at the very end. For some Turkish and Syrian lentil soup recipes, it's common to roast a few finely chopped cloves of garlic and 1/4- 1/2 tsp of Aleppo chili pepper in olive oil for 1-2 minutes. The Aleppo pepper release its own crimson oil and colors the olive oil red and it's gorgeous to see the color change. Add the hot oil, garlic, and pepper mixture to the soup and mix it in before adding the fresh parsley and lime juice at the end. It's surprisingly a subtle addition, I can't taste the garlic too much, but the Aleppo pepper does add a welcome and complimentary spicy taste for the soup.
This was so delicious! I was a little concerned because I've never cooked with barley and also because the ingredients were too basic, but the overall dish was fantastic! I will definitely make this again. Thank you, Yousef!
