How to make Sardinian fregula pasta with saffron & sausages | Pasta Grannies

- Fregula (or fregola in Italian) is a pasta special to Sardinia. This peppercorn shaped pasta has been made by hand since medieval times; saffron has been grown on the island for even longer - it is thought the Phoenicians introduced it over 2000 years ago. And in this week's episode, organic saffron producer Cumpanzos organised a cooking demonstration for us using both these ingredients.
Several of you have asked about the hut, or 'su pinnettu'. This is a shepherd's hut, and Cumpanzos have a little video on its reconstruction here:

The preparation of fregula pasta looks almost identical to couscous! Although the way the dish is prepared is very different, sembra molto gustoso

hi Jennifer, the building is called 'su pinnettu' and it is a shepherd's hut found in central northern Sardinia. This particular building was rebuilt by Cumpanzos after a fire a few years ago. I'll put a link in the comments section above to the little video they made about it. best wishes, Vicky

What's the story behind the hut they are in?
hi Kris, it's a shepherd's hut called 'su pinnettu' in Sardinian. This one is a reconstruction after the original was burnt down and I will put a link to the video showing the process in the comments section above. best wishes, Vicky
Isn't that exactly how couscous is made?
I'd always heard that couscous is steamed rather than boiled because it would fall apart if agitated too much.
Yes, fregula is made the same way as couscous. I don't know about the steaming advice though - fregula does not disintegrate when simmered? best wishes, Vicky
This dish must be not very good to eat., otherwise the young people would rush to partake it, instead of starting to dance immediately upon she finished cooking as to avoid eating it...
First of all, fregula is delicious 😂 second, they are not avoid eating, the granny is preparing the table and while she’s doing this, they are dancing (demonstrating some traditional dances)
Think about the ingredients, imagine the taste- how could it not be delicious? The video is only so long, so they had to dance.
