    This is the most helpful video I have seen about this subject. I did this twice to test. First time I followed the video. Second time I steamed them instead of boiled. I think steaming was much much easier.

    Just an idea....what if you freeze the sausage after wrapping in plastic to make it firm , then remove plastic wrappings and wrap in foil sheets ( just enough to go over twice) while still frozen . Can keep refrigerated after that if you need it that way to steam . Then steam the sausages .......maybe wrap in baking paper instead of foil after removing the plastic wrap ( secure the ends with string or rubber bands )
    Recipe defnitely looks very good and worth trying .

    Very interesting! I don't eat pork, so finding sausage without pork is difficult, even chicken sausage has pork casing, so this recipe is one that I definiteky will be trying!

      I don't know if you have a whole foods near you, but the ones that I go to do their chicken sausage behind the butcher counter in lamb casings.

    Water boils at 100c(212f). Good quality plastic wrap has a melting point between 120 and 140c(250 to 290f) So the answer is, it's ok, Just make sure you read the carton when buying the wrap, it should tell you the safe temperatures.

      Wrap in aluminium foil instead, and if needed, wrap the aluminium foil wrapped sausage in cling film. No contact of plastic with meat and water proof too...

      You need to use special, cooking plastic. It's usually marketed as microwave safe :)

    Is it safe to cook chicken down so rapidly in ice after it being on high heat? Then further messing with temperatures by heating it again? It’s a great idea abs would love to try it but have to consider salmonella and other harmful risks when cooking with chicken

      There is no black pepper used in the recipe. I think if you are talking about white pepper it is milder in flavor than black pepper.

    I love the your recipes. Let's keep brainstorming ideas over the use of plastic. Others use aluminium foil but it's not any better. I suggest ostrich casing especially for those of us that do not eat pork.

    good recipe BUT , you should partially freeze your chicken in chunks before you grind it, that way you wont burn out your food processor
