I am from Poland and I’m so glad you made that video. I’m about to make them for Thursday. It’s honestly a HUGE tradition here. Basically everybody eats them on that day

@@ChainBaker tradition in poland is so strong around them that even in the office you will see companies ordering a few hundred doughnuts for the employees. We eat roughly 100 million doughnuts that day.

In PL it is common to fry donuts on lard.

yep my parents were from Poland and they are called pączki (pronounced ponchki) filled with plum jam tradiotionally , i just loved them, this is awesome ty for posting

Made these today - simple, quick and easy just like Charlie said it would be!! Used some homemade strawberry jam (from one of Charlie's "channel members early access" videos) and blended it with whipped heavy cream - OMG - the crumb, the crispy crust, the creamy strawberry filling - simply heavenly!! (#317) photos have been posted.
In our family bakery, years ago, they used to use very firm jam. Think one that you can cut into cubes. And the it's put inside during shaping, so it's fried with dough and there is no hole. Second thing there was a bit of old dough added for better result

Interesting. I only know the pastry from Germany and Austria, where it is very popular under the names "Berliner" or "Krapfen". I would have assumed that these Polish donuts have their origins in Prussia and the "Berliner". But maybe I'm wrong.
They developed in parallel across the Europe. Early versions were heavy and were not sweet (more bread-like). After yeast became commonplace it got a fluffy texture we know today. Similar pastries are in Germany, Austria and Italy.
Do they use rose or plum marmalade/jam for donuts in Germany? Because in Poland these are the only traditional fillings.
Ironically, I was just thinking about these yesterday. I’ve never had a Paczki (Punch-ki?) before, and always wanted to try one. Now, this looks like a good recipe to try my first!

Hot jam doughnuts are my absolute favourite sweet treat in the world. I’ve never had success making them sadly, always raw in the middle. I will definitely try your recipe before I give up on making them forever. 🍩

See, that's the beauty of this thing. Charlie makes these donuts on Fat Thursday, people in New Orleans think that it's for Fat Tuesday instead, large parts of Germany eat them on Rose Monday (and on New Year's Eve) and for whatever reason, donuts have been the traditional dish that my family makes for Good Friday. There is no rhyme or reason; but that just means you can make your own traditions. If you want to eat jelly donuts any random other day, don't let anybody stop you
Cheers from Poland :) I think scalding is a good practice with doughnuts as well as I also add 4 yolks for extra richness/softness. As for the alcohol, adding 2 tblsp of spirit/vodka is supposed to reduce oil intake :) grandma's theories!

YAY!! 200K!! Lost power due to the torrential rain/wind (while I was in the middle of making your Kouign-Amann, thankfully it was in the first chilling stage) - power back up within 10 minutes, so continuing the bake.

Replace the egg with 35g non dairy milk and 10g fat.

Whats up my baker. I had a quick question man. I'm looking to buy my first set of Bannetons. I was looking on Amazon and I must say I was shocked at how pricey a set is, like 70$ and more. But anyway, reading the comments about the Bannetons, I kept reading that the bowls came with a horrible hodor that was very hard to get rid of without vinegar and baking soda. I was wondering if that was normal for Bannetons to apparently smell veyr bad when unboxed? Sometimes on Amazon its kinda scammy, so i'm worried to invest such a big amont of money before knowing for sure. Cheers my baker.
They are pretty expensive for sure, but a good one will last a lifetime. The baskets I have all smell of wood which is what they're made of. I'd suggest getting single baskets instead of a set just in case. Look at ones that have many reviews and a good score. Some bad reviews will always be there because you can't please everyone.
But the basket is such a simple thing that you can't really go wrong.

Why not adding butter after initial mixing? Is it ok to mix all together? Regarding the gluten and so on..like in brioche
I've changed my methods. It works 👍
I've tried making them in similar ways multiple times, but i could never get them to be fully cooked in the center. I'va made them with the traditional method, ultra developing the gluten and therefore obtaining the loved white ring, or with the folding method, but neither worked for cooking them, even making them very small. The only time I could them to be fully cooked was by lowering a lot the temperature of the oil, but then at that point the donuts were too oily and uneatable. Do you have any suggestions?

For sure. You can roll the dough out flat and cut it into any shapes you like.
These exact donuts are made on Hanukkah (Jewish holiday)
In my many years of living...I have never heard of a donut tied to any Jewish holiday. Perhaps only in certain countries?

What can be used to substitute for the rum?
You can just leave it out. It'll still work.
If you want the flavor, then you can either buy "essence of rum" or even better "rum flavored syrup". Neither option is ideal, but they come surprisingly close in baked goods and desserts. The flavor isn't quite a 100% match and you will notice the difference if consumed straight up. So, don't do that. You won't like it. But when mixed with other ingredients it works quite well. I made a kid-friendly baba-au-rhum with the syrup and it worked as well as could be hoped for.
If you want the same effect on the texture of the dough though, then unfortunately, there really isn't any good substitute. You need actual alcohol for that. But as Charlie says, you are probably fine to omit this ingredient and the results will still be wonderfully tasty.
But depending on why you are asking this question, it might be OK to use real rum anyway. The amounts of alcohol are going to be minuscle. This is similar to what you get in alcohol from using vanilla extract. Even young kids would be fine to eat the jelly donuts and won't experience any health effects. Objectively, there is no concern about added alcohol if used in a recipe like this.
On the other hand, if you want to withhold alcohol for other reasons (strict religious observance, or in consideration for a recovering alcoholic, ...) then even the mere concept of alcohol is incompatible with your goals. If so, omit rum from the recipe and you'll be fine.
Do you use natural fats for frying?
I used sunflower oil. You can use any fat you like.

@ChainBaker that's so interesting! The French have Fat Tuesday (Mardi Gras). British used to do Shrove Tuesday (Pancake Day)... probably also French influenced. I know nothing about the Polish church... maybe y'all take fasting more seriously than the rest of catholic Europe lol... I always wondered why our grocery stores in the southern US have choco glazed pczki next to New Orleans style king cakes. Still wondering but now slightly less confused lol... Looking forward to trying this recipe out this week!
